Pumpkin Part III: Stick With What You Know

So I finally got around to roasting the seeds of the pumpkin I used to make the soup. I have roasted seeds may times before, but always from Halloween carved pumpkins, not one for consumption. I think this is the first Halloween in as long as I can remeber that I did NOT carve pumpkins. I had tried to roast the first set of seeds from the polenta pumpkin but I used a recipe that was different than my own, as it was handy attached the the polenta recipe. Called for a higher temp and a shorter cooking time. Anyway, I was out in the garage putting air in my tires while the first batch got too toasty. I ended up throwing them down the disposal. This time, I stuck with my own recipe....sprayed them with a bit of cooking spray and added a garlic and a toasted spice rub (both from Napa Style), and checked them often. I brought them with me to work so that I can graze on them rather than the other junk around here. Roasted Pumpkin Seeds Recipe
