Has it really been since August???

I can't believe it's really been August since I posted last.. sheesh, where does the time go? Anyway, since my lovely wife was recently diagnosed with Type II Diabetes, I have been trying to learn a new way to cook for her. If you check out my latest cheesecake, you will see it was made with a sugar substitute. It actually came out better than a regular cheesecake. I was surprised. Anyway, I had no idea what Haupia was, let alone what it was supposed to look like or taste like. Flying blind, I made this one for a friend at work who was born and raised in Hawaii. She said it tasted exactly as a native Hawaiian would have made it!!! YAY for me! Her only criticism was that the Haupia layer wasn't thick enough. Apparently, the Haupia should be as thick as the cheesecake itself. I'll know better next time.
