Honey

As I was looking for things to include in my food storage, I realize that we tend to eat a lot of sandwiches. Often the most popular sandwich is peanut butter with sort of jam or jelly. Several months ago as I was shopping at Wal-mart I noticed honey sitting on the shelf. I realized that this something we have used in the past for not only sandwiches but also toast, hot Rhodes rolls, etc. I picked up some bottles and they were quickly consumed by my growing teenage boys! A few weeks ago my boss sent out an email about our company having some creamed honey, I think left over from making honey butter for some of the Rhodes Bake-N-Serv (www.rhodesbread.com) dinner rolls (I think for those that were in the round pans). So I thought that might be a good addition to our food storage. We were able to pick up two cases (about 32 pounds total) of this creamed honey for a very reasonable price. The shelf life if kept in a cool place is supposed to be up to 20 years! I don't know if I will ever find out if it will last that long. At our current rate of consumption (caused by my four oldest sons) it might be gone by the end of the month! My next step with food storage is to tackle the basics.
