We grew up around, pasta, tacos, potatoes. What about, plantains, green bananas, yucca, malanga, yaro root and all those weird looking vegetables you see at the produce section. Believe me there are wonderful and they give you a variety of flavors. I wish if in every supermarket they will have someone cooking these rare vegetables. There is a long black looking root called "yautia" (yaro root), it comes in white and purple. The Purple one for me is the better. You peel this sucker and boil it like a potato, then when is ready you take a fork and smash it with a little bit of milk and butter. Oh!! My! Heaven!! The taste is so good, that you will love it. How about dice it and put it in a soup, wow!! Very good also. I'm telling you, the possibilities are endless. Ok you may think I’m crazy, but I took some "yautia, and I greeted using the grater box, with the little holes, form a paste looking dough and I make dumplings for my chicken soup, of course you have to season the dough. It makes my soup creamy and delicious. Next time that you are in the supermarket, ask the produce manager to show you the Yautia root, or malanga root!! You will discover something very good! Until next time, Hope that you give the potatoes a rest! Happy Cooking!!
