Method to my Madness... quick & easy these days~!!!!

There are times that I love to fix my old time fav's like stew or potato soup... or even lasagna. But these days, I am not sure if it is the warm weather or just feeling down from 'worldly-ugh'... I have turned to the quick and easy mode. For instance, tonight, I made some concoction by using seasoned, boiled chicken. I had boiled a chicken the other day using mostly mexican type spices to season with. When done I just covered it and put it in the fridge for future use. Thinking I really wanted like chicken tacos or enchilatas.... I ended up with some macaroni & cheese casserole with mexican undertones. I almost feel guilty when I cook like this because I know it is not the most healthy cooking fashion, although, I am sooo not the healthy eater any ways! haha I do truly wish I had a BIG kitchen, I think sometimes my inability to come up with something fantazmic for dinner is due to the fact I DO NOT WANT TO ENTER THAT KITCHEN! hahaha... It is so small and so not efficient. I guess these days I shouldn't complain... I have a kitchen I can call my own! Any ways... just felt like sitting here and telling a little about me and my not so in tune style of cooking. At some point I will actually get on here a write a few of my fav recipes. My husband always laughs at me when I have one of those award winning dinners he asks me... 'honey did you write that one down', and of course my reply tends to be, 'oh I will remember it, it was easy'!! I will be back some day and share.... God Bless.... and Good Cookin' to Y'all!!!
