Winter is in the air and soup on the table.

We had to move on Halloween, it sucked as all moves do. I have almost gotten my new kitchen together and am ready to try new things. I need soup. I have a French onion soup craving and am searching for a good recipe. I never before realized all the different variations. Now I am more confused then ever. Wine or no wine, sweet, white or red onions? Vegetable broth or chicken? Gruyere or Mozza? I think I may have to experiment and create and find a happy compromise...
