I have really had a hard time lately with getting something cooked for the family. The kids look forward to having a real meal rather than Mac & Cheese every night. I just feel so worn out. Trying to pick up the slack when your spouse is sick (over a long period of time, 4 years in my case) is really, really, really exhausting.
I have tried to find quick and simple recipes. But the problem is more than just that. I guess one person can only do so much. It seems impossible, on a consistent basis, to not only cook but to work full time, clean the house, do the wash (for 8 people!), and volunteer. Something has to give.... oh yeah, my sanity!
Health issues in families can be really devastating. Too often I feel so alone and with no help, no one to talk to, no one who understands.
The only thing I seem to have left is hope and faith.... and a lot of energy (that is another topic)!
