Apples For Empanaditas

I'm off this week from work so I finally have the opportunity to do some serious baking! A friend of mine gave me a bag of green apples from her very own apple tree so today my baking focus will be on apple filling to make apple empanaditas. Empanaditas (for anyone who may not know) are homemade individual omelet shaped pastries that can be stuffed with all kinds of things and be either sweet or savory. I bake mine rather than fry them and give them a generous brushing of butter so they turn a beautiful golden brown. These are great in the morning with coffee or milk and can be eaten "on the run" without making a big mess. My husband loves them! I am going to make regular filling and a small batch made with Splenda (for me).
