Well....

The new year has come and gone and we all seem to have survived it.... again. What fun the future holds for us all! I had a few requests for a peppermint cheesecake. Interesting thing to develop. Had a chocolate graham cracker crust and peppermint candy crushed up in it. The first one needs a little work before I post the recipe. Needs a little more candy to give it a stronger flavor I think. It was very subtle. Good news is though, the candy all dissolved when it baked so there wasn't any pieces to crack a tooth on! Anyway, I sent the first one to work with my wife. I'll wait and see what the critics there have to say before I do anything else. Maybe the very subtle flavor is just right. I'll keep you posted.
