Well I've finally recovered from the holiday season and have decided to change my ways. I'm fat and love food. I came to a realization that instead of lots of crap food I am going to start eating healthier and I have even strapped a pedometer to my ever increasing waistline! Let's try healthy eating and walking for a start. So last night I went out and bought my first bottle of balsamic vinegar. I spent the day looking for vinegarette recipes and ended up making up my own, it was pretty good even though I have no comparisons really. I whisked together: 1 tbls. Dijon mustard 2 tsp. dark brown sugar 1/2 tsp. salt 1/2 tsp freshly ground pepper 1/4 cup balsamic vinegar 1 tbls. crushed garlic(fresh) Then I slowly whisked in 3/4 cup olive oil(extra virgin as I don't like trampy olive oil!) I think if you have good balsamic vinegar you can omit the brown sugar. Anyhow I enjoyed it and figure hey...maybe if I eat quality ingredients then I won't have to cover up shitty food with fat laden sauces and stuff. Anyhow for tonight I will have salad again and try a new side dish recipe. I am going to try another cipolloni onion recipe by Foodie called BRAISED BABY ONIONS WITH ORANGE JUICE AND BALSAMIC VINEGAR. I hope it is as good as it sounds! I think I'm in a balsamic vinegar phase...
