And we're back!

Happy February! It's hard to believe a month has already passed. I'm getting better at having dinner ready at night, so we're only going out once or twice a week, depending on workloads. It's been nice to not have to bundle up Monkeybaby and load her up in the car. I've been thinking of quick and easy dinners, lately, in case of work. I have one winning formula: 1. pick a pasta. 2. pick a meat. 3. pick a sauce. 4. pick a vegetable. 5. pick any addons. For example, We had penne pasta with a cheese sauce (a packet, no less), with chicken, spinach, garlic and bacon crumbles. My husband liked it so well that a big pan only lasted two dinners and a lunch for him. The most time spent was cooking and picking the chicken. If you think about it, most Italian dishes are a hodge podge of vegetables and additional ingredients, so I can't be too far off. My one failed experiment this week - pressure cooker chicken. I didn't let it cook long enough, and it wasn't done when I put it in the fridge. :(
