I don't remember where I first learned how to make Swedish Meatballs but find them to be a terrific potluck contribution particularly when I expect the other contributions to be high carb, high roughage, or high sugar items that I generally eschew. I know that at least my Dominant and I will be able to eat my own potluck submission without guilt and not feel hungry or deprived. But I've never had to take home any leftovers. Although there's considerable preparation to be performed beforehand (at least one day before the event); the actual steps required to complete the dish on the day of the event can be performed quickly, while wearing one's fancy dress or fetish outfit and not getting all into a sweat. The dish is portable enough to carry in the saddlebags of a motorcycle. This recipe meets the health, moral, and nutritional guidelines of my decidedly minority (but growing!) dietary philosophy of which I represent in my own cookbook, *Nourishing the Predator: Recipes to Preserve and Enhance Virility in the Dominant American Male*. Although I have given out this recipe to individuals who have requested it, it has never before been formally published. I love Salsa of all sorts and really love Pineapple Salsa. When you mix the Pineapple and Strawberry in one dish the taste explodes in your mouth. This one one of the first things I learned to make, and made it often for my family when I was a teenager. When I got married and raised a family of my own, I used to make it all the time. It has been adopted and/or adapted over the years by almost all of my family and friends. This is a recipe i adapted after trying a lamb & white bean chili at a chili cook-off. That chili was unforgettable (although it only won third place) and i tried to recreate it. I use turkey rather than lamb because i avoid red meat. This chili keeps in the fridge for a week and can also be frozen. It gets better the next day when the flavors have steeped. My version of Sarah's recipe is a people pleaser. It keeps well for a few days. The secret, of course, is massaging the kale. This breaks down the cellulose structure of the leaf, making it more tender and less bitter. Any kind of kale can be used but i prefer dinosaur kale for it's intense deep green color and milder flavor. Use organic produce if at all possible! I love food, I always have. I especially love well prepared seafood dishes. My mother was a truck driver and my dad was not around so my mom started me out with simple stuff like grilled cheese eggs and other such meals, from there I expanded trying new spices and ingredients. Years ago I was asked to produce enough Mousse to serve a large private dinner party. I was thrilled but knew I had my work cut out for me. After that experience I decided to start experimenting with other ways of making this wonderful dessert without all the work.
