Now that I live in Texas, I am pretty heavily influenced by tasty Texan foodie delights such as queso, brisket, breakfast tacos, and of course queso. Mmm queso. So when I thought about how to jazz up the traditional latke, I immediately thought Mexican. Besides my residence close to the border, my former roommate back in NYC is half Jewish and half Mexican and she turned out pretty amazing, so surely it could work for a latke! An idea was born. The jalapeño poppers recipe comes from hanging out on Saturdays in the South at BBQs in backyards over beers. If you have ever smoked a pork butt or brisket or rack of ribs, it takes time and is well worth it. But you need snacks and nothing is better than coming up with items you can throw on the smoker, or grill, during the day to munch on and hold over your appetite. This is one of those such items. This is a recipe I make every fall or winter in honor of my 10 ancestors who came over from England on the Mayflower. Indian pudding, so named because the settlers called the corn meal introduced to them by the native people "Indian meal," is one of the first American foods to be documented. A quintessential New England dish, it doesn't get a lot of play in the rest of the country, so it always surprises guests. My sister-in-law made this recipe as an appetizer using small flour tortilla and we loved it so much that I make it for our dinner now. It's quick and simple, yet quite flavorful. I'm going to say that this is 6 servings because I think normal people will have 1 filled flour tortilla. My husband and I are not normal and we have 2. Spicy Catfish Cakes for the Slow Carb Lifestyle
Since starting the Slow Carb Diet/Lifestyle a year ago, I have been on a quest to find and adapt dishes that have a robust flavor profile, but are quick and easy. Inspired by one of Gordon Ramsey's shows, I tried a range of fishcake recipes, eventually creating one I was in love with. After experimenting with different renditions of fish cakes, I found that fish cakes can be as dry as cardboard. Creating a flavorable, tender cake came down to two variations: what kind of fish was used, and how thoroughly the fish was broken down in the mixing process. Using a mix of cod and catfish, these fishcakes were flaky, tender and mellow in flavor, enhanced by a spicy chile sauce and a tangy tartar sauce. Submitted by: "Dorothy Stainbrook"

Through my blog, "Panning The Globe", I’ve learned that there’s often a rich history or, at the very least, an interesting story that explains how a particular dish came to be. I traced curried chicken salad back to Queen Elizabeth’s Coronation. They called it “Coronation Chicken…a recipe of cold chicken in a curry cream sauce.” It was invented to feed the 350 foreign dignitaries attending Queen Elizabeth II’s coronation luncheon on June 2,1953. This recipe was created when I discovered a new type of sausage in my supermarket. This is what I like to call a "pantry meal". I often look through my fridge and pantry to find inspiration and see what I come up with. Some of my favorite recipes are created this way. This is how my grandmother often cooked, which inspired my blog, www.myitaliangrandmother.com. With a pound of chicken sausage, some vegetables and pasta a fabulous meal was created. I love the versatility of this dish; substitute the pasta and serve it over brown rice, swap out the mushrooms and replace with zucchini. Let your taste buds guide you. Heavenly Lemon Tart (Gluten-Free)
Growing up in Southern & Northern California, I always had several citrus trees on our property. Twice a year my grandmother would come stay at my home for a few weeks and we would do nothing but canning, baking and more baking! Throughout the years my grandmother, mom and I made several recipes that have been passed down from my great-grandmother, great-aunts and other family members. My great-grandmother Anna won a Betty Crocker Cook-off in the 1950′s and yes I will be writing a blog post on this with soon including the original newspaper clip! With having access to fresh citrus pretty much year round, we always had so many lemons we did not know what to do with them! However, my grandmother was always so creative in the kitchen. From lemon curd to lemon crumble bars and every lemon dessert you can think of in between, my grandmother had a recipe for it! My favorite however was her lemon tart. Cherry Chipotle Meatball Sliders
I made these meatball sliders on a morning when my 15-year-old's string quartet was rehearsing in the living room. Those poor kids had to smell this cooking for half an hour while they tried to play Beethoven. Talk about distraction! After their rehearsal they polished off a huge platter of these sliders in less than 10 minutes. I love meatballs in any form, but sliders make them finger food and thus even more awesome.
