My husband's family on his mother's side come from a long line of chefs and restaurant owners, including the Cafe Sevilla, owned and operated by his "Lelo", and Las Novedades of Ybor City. Pico Dillo is more comfort food than restaurant fare, and at my home it makes a weekly appearance, particularly because I can make it when I have some free time and serve it on short notice. It freezes well and serves as the base for stuffed potatoes (papas rellenos) and empanadas. This recipe was given to me by his grandmother, Lily Carreno.
