Bahamian Peas and RicePeas and Rice is arguably the main dietary staple of Bahamians. Here in the Bahamas, we consume it on a daily basis; mainly at lunch and dinner times. Visit any down-home, or even an upscale restaurant here in the Bahamas, and you’re sure to find peas and rice on the menu (on any given day).
Bahamian Peas Soup and DumplingsPeas soup and dumplings or dumpling soup is the “official soup” of the Bahamas. There are some of us, however, who prefer using beans instead of peas, in which case, I guess, it becomes bean soup It is quite common to consume a great deal of soup during the wintry months. Bahamians, on the other hand, devour this stuff year round. Besides, it is quite warm here almost every day, even in the “winter.”
Baked Macaroni and CheeseBaked macaroni & cheese is one of my all-time favorite comfort foods and guilty pleasure. In the Bahamas we add sweet peppers, onions and hot pepper to make it our own. You could add your own unique twist to this dish. Here’s mine:
Cole SlawThis is coleslaw, Bahamian style and it is one of the easiest side dishes to prepare, yet it is flavorful and not to mention healthy, especially if low-fat mayo is used. Here is a basic/simple coleslaw recipe:
Conch SaladEver heard of Conch Salad?! If you’re in the mood for something light and refreshing, yet appealing to the palate, then you have to try our super healthy conch salad. No trip to the Bahamas is complete unless you’ve had our “official salad.” This dish is highly sought after and is a favorite among visitors to our shores. Could it be for its dynamic flavor, lean protein and rich iron and calcium content? Orrrrrr…..could it be because conch is said to be an aphrodisiac??!!
Conch FrittersConch fritters are highly-favored down home delicacies enjoyed by natives and visitors alike. These hard to resist, bite-sized treats are usually served as appetizers along with a cocktail dipping sauce. As a variation, lobster/crawfish could be used instead of conch.
Steamed Corned BeefWhen you hear the words “fire engine” here in the Bahamas chances are we’re referring to (steamed) corned beef and not the literal fire truck, lol. You see, we have a slang term for just about everything and corned beef is no exception. This is the corned beef that comes in a tin and not the kind that is sliced and used to make those gourmet-looking sandwiches (you know the kind that really looks like beef). From time and memorial, this dish has been a part of the Bahamian culture and is one of the easiest dishes to prepare (even for those of us who can’t boil water). Steamed corned beef is usually served with white rice for lunch/dinner or with grits for breakfast.
Curry ChickenThis is Bahamian curried chicken done my way with just one added ingredient; the secret to the dynamic flavor is the cream of chicken soup!
Crawfish Salad or Lobster SaladCrawfish in any form is considered a delicacy here in the Bahamas. It is one of the most expensive seafood in these parts. There are countless recipes that utilize this dainty shellfish, but today I’m making crawfish salad, my husband’s favorite. Lobster may also be used because the taste is very similar to crawfish. Here is how I made my salad (a very large serving), you may reduce or increase ingredients as desired.
Fried PlantainsFried plantains, one of my favorite side dishes. It doesn’t get any easier than this, folks!
Guava Meringue PieThis is a recipe that I dreamed up, but was a bit hesitant to make because at the time guava season was long over and I did not have any frozen guavas. I reluctantly purchased a can of guava shells from the local supermarket thinking it would be flavorless at best. To cut a long story short, when my pie was completed, I was completely blown away! The guava flavor was impressive; it tasted just like fresh guavas and the crust wasn’t too bad either. If you want to give it a try, here’s the recipe:
Johnny CakeEven though it is called Johnny Cake, to Bahamians it is really bread and in some instances it is called Johnny Bread. I call it the “official bread” of the Bahamas and we eat it with our stews, souses and soups. This is one of the easiest breads you will ever make.
Mango Coconut Cream PieHere is another one of my original recipes. I decided on yet another tropical pie to use fruits that are commonly grown in my country. This Mango Coconut Cream Pie is both refreshing and delicious. Best of all, there's no baking involved. I had lots of fun preparing it and hope you will too.
Potato SaladBahamians can’t resist a good potato salad. This easy to prepare side-dish is a Sunday Dinner favorite. It is definitely one of my guilty pleasures.
Stew FishNow, I’m not throwing grammar to the wind when I say “stew” fish. Here in the Bahamas, we don’t add the ‘ed’ at the end of stew as it relates to the name of the dish (and that goes for all stewed dishes). In regards to the preparation there are times when I'm feeling really lazy and skip frying/searing the fish before stewing. Also, when needed, I use a roux of 2 tbsp of flour and water for extra thick stew. Be sure to use a strainer.
