Cheese OmeletteThis is a basic recipe for plain cheese omelettes, however, there are a huge variety of ingredients you could use to add extra flavour, such as GF ham, GF bacon, prawns, mushrooms, tomatoes, onions, herbs, etc. If using herbs, make sure you combine them with the eggs as you beat them. When using ingredients such as prawns, etc., don't forget to make sure they are cooked before adding to your omelette. To make this Lactose-Free, cheese can be replaced with soy cheese. Also, some 'hard cheeses' such as Cheddar, Swiss, Colby and Parmesan have low or no lactose.
Cheese & Corn Muffins (Gluten-Free)These muffins are a quick and tasty breakfast when you are on the go. My boys play sport on Saturday mornings and often they need to be up earlier for sport than they are for school. Being able to give my boys something delicious from my kitchen as we are racing out the door is so rewarding (and much better for them than a sugary breakfast bar bought from the supermarket).
Ham & Corn Cups (Gluten-Free)Often it is hard to find suitable pastry replacements when cooking gluten-free and this recipe has a solution to that troublesome problem. Instead of using pastry as the base, in this recipe we are using shaved ham. These ham and corn cups make a delicious breakfast or a tasty lunch.
Vanilla Creamed RiceThe delicious aroma of this sweet vanilla rice drifting through the house on a cold winter's morning is the perfect way to get the kids out of bed, and to fill their tummies before they leave for school.
Banana SmoothiesSmoothies are a great way to fill the kids tummies before they run out of the house in the morning. They are quick to make, quick to drink, and very, very tasty! You could also swap the bananas, or add other fruits such as mangos, tinned fruits (without the juice), blueberries, strawberries or raspberries. For a Lactose-Free version, milk can be replaced with Lactose-Free milk or non-dairy milk such as soy or rice milk. Ice-cream can be replaced with soy ice-cream, LF frozen yoghurt or even fruit sorbet (as long as you ensure that all ingredients are GF and LF).
Apple Pikelets (Gluten-Free)These apple pikelets are great any time of day. My mum would often make them for my sister and I when we came home from school which was a real treat. To make this recipe dairy-free, replace the butter with dairy-free spread or cooking oil. The milk can be replaced with lactose-free milk, non-dairy milk such as soy, almond or rice milk, or even apple juice in this instance. Note: If you are using a non-dairy milk or apple juice, add half the milk replacement and then add the rest slowly to ensure your batter is not too runny.
Banana & Coconut Pancakes (Gluten-Free)These delicious pancakes are quick and simple to make. They taste fabulous and you wouldn't even know they were gluten-free unless someone told you. They are such a treat to have in the morning (or any time of day)!
Corn Fritters (Gluten-Free)We all love corn in our household so this is a quick and easy recipe to whip up for breakfast, or a tasty snack.
Cheesy Vegetable Breakfast FrittataI hate to waste food and this is a great way to use up last night's dinner leftovers. It is also a tasty and healthy way to fill hungry tummies before they leave the house in the morning. In the photo I used potato, pumpkin and onion left over from the previous night's beef casserole and then just added some oregano and parsley from the herb garden.
Cinnamon Banana Toasties (Gluten-Free)Recently I was enjoying cinnamon toast and coffee with my friend, Katrina. She told me about her family's cinnamon banana toastie recipe which sounded absolutely delicious. After trying it out I discovered that not only did it sound delicious, it tasted absolutely amazing too! Katrina was happy for me to share this recipe with you and I'm glad she did because it is sooooo irresistible! The only things you will need to make this delicious treat are a sandwich press and some simple ingredients which you probably already have in your kitchen.
