I make a variety of this recipe almost once a week because Joe loves it, shrimp goes on sale buy one get one free all the time, and it makes for great leftovers for lunch. Plus, it is healthy and I get my pasta craving in for the week. I’ve made it with peas instead of asparagus as well. Sometimes I’ll slip in a tablespoon of butter to the sauce but it’s certainly not as healthy that way!

It’s not super healthy but if you serve it on a wheat bun with fruit or veggies it’s not too bad. The pork tenderloin is more expensive but it is a leaner and healthier cut. You can get a less expensive pork roast and it will have more fat. I have done this before due to cost and just trimmed off as much fat as I could before cooking. Last time I made it the leaner pork tenderloin was on sale so I bought two and stuck one in the freezer for the next time.
