I was having a problem with my bread recipe tending to overflow the pan and mess up the oven, so I tried taking some batter out and putting it into 2 ramekins. Success! So now we get the bonus of 2 hamburger buns with each loaf of bread, or sometimes I just make a recipe of buns. David loves them, no more grocery store buns!

Twelve years ago when my only grandson, David, was 21 months old he was diagnosed failure to thrive and his parents were told he was starving to death. It was Celiac Disease. We had never heard of Celiac Disease, but were told that he could never again eat anything containing wheat, barley, oats, or rye. David liked toast and jam for his breakfast, so I went to the grocery and bought a loaf of gluten free bread, which when he took a bite, he promptly spit out. I tasted it, I might as well have eaten the wrapper it came in, it wouldn't have tasted any worse. Since I am a baker and bread maker, I thought "how hard can it be to simply replace the wheat flour and make my own gluten free bread?" I bought rice flour and attempted to make bread with it...a total disaster. OK, I thought, this is going to be a bit more difficult than anticipated. Next, I bought bread mixes at the store and they were better, but I believed that I surely could do better. Since my son-in-law is a chemist he helped me to determine the ratio of proteins and starches needed in various alternative flours that would most closely resemble those properties in wheat flours. We turned to ancient grains for the most part and developed our own gluten free flour blend; Grandmas Gluten Free Goodies was born. This cookbook has the recipe for making white sandwich bread, hamburger buns, and slider buns using Grandmas GF Bread Mix which has everything in it except for milk, eggs, and oil which you add. I have also included the recipes for white sandwich bread, hamburger buns, and slider buns using Grandmas GF Baking Mix which I use for all my baking. Thanksgiving or Christmas dinners can be depressing when you have Celiac Disease. Imagine that you are invited to dinner at your in-laws and of course they don't really understand the restrictions of your diet. You can eat the turkey, but even then if it was stuffed with bread stuffing you run the risk of cross contamination. You can eat the mashed potatoes, and the sweet potatoes and hope that no spoons used to serve these dishes also went into the broccoli rice casserole or the green bean casserole and contaminated the potatoes. No gravy, no rolls, no casseroles, no desserts. Here's an idea- volunteer to bring a dish like Broccoli Rice Casserole or Green Bean Casserole and a pie from this cookbook that is gluten free to take to a holiday gathering so you know there will something there that you like and can eat (just be sure you get to it first). Or better yet host the Holiday dinner for your family and no one but you will know it's Gluten Free. Many of my customers also have other allergies, the most common is dairy allergies. For those who also have dairy allergies, all the recipes in this cookbook can be made very successfully using coconut milk or almond milk and dairy free margarine.
