Pollo Fricassee (Chicken in Red Wine)
This dish will be a hit and leave everyone begging for more. If you want to have leftovers make more than you think you need because I promise people will go back for second and probably thirds. It is savory but it has a tangy sweetness because of the wine and after the chicken my favorite has to be the carrots. They are soft and sweet, like little nugget treats. I always serve it with rice so it sucks up all the sauce, but it doesn’t hurt to have a piece of bread handy. Submitted by Carolyn Rios Lee Notes: 1. You can also use other vegetables such as green onion, red bell pepper, green bell pepper, etc. Feel free to add or substitute any of the vegetables. 2. To make it simpler, instead of sautéing each ingredients separately, you can sauté them together. Start with meat and shitake mushroom. When the meat is cooked, add vegetables. Add vegetables that take longer to cook first: add onion, then carrot, then button mushroom. Sauteing each ingredient separately and then mix them all together is the authentic way but this short cut method should not make that much difference in the end result.

You add anything you want or even change up the cheese as long as it's a good cooking cheese like fontina cheese. You can add more or less of the ingredients stated in the directions. Pairs well with garlic smashed potatoes, brocoli or a salad with a glass of crisp red or white wine. Bon Appetite!
