Eggplant Rollups with Red Pepper Tomato SauceThis recipe actually came to be after stumbling across a TASTY post on Facebook. I only briefly caught the clip but what I did see was enough to turn me on to the idea. Tender, roasted eggplant all rolled up with a delicious ricotta filling and baked in a luscious red pepper tomato sauce. Hearty, flavourful, and fabulous!
Cheesy Shells with Roasted Brussel SproutsI love brussel sprouts. I love them especially when they are roasted. It was only natural to fold the tender, roasty sprouts into a creamy, delectable cheesy pasta and bake it to perfection. Did I say perfection? That's what every bite was!

Cheeseburger DipI love creamy dips and this is one of my favourites. Adding crumbled "beef" gives the dip a heartiness while the topping of romaine and scallions freshens up every bite. Such a delicious dip!
Slow Cooker Spinach & Artichoke DipI actually tried this at a friends for the first time and had never actually considered using my slow cooker for dips. I played around with the recipe and whipped up a super creamy, super indulgent dip with lots of flavour.
Basil PinwheelsA fun use for Pillsbury Crescent Rolls. Rolled up with fresh basil, cheese, onions, and seasonings and baked until crispy and delicious. They're such a simple and tasty snack.
Herbed Polenta FriesJust as satisfying as a batch of french fries. Polenta fries are crispy on the outside and pillowy on the inside. Such a delightful treat!
Roasted ChickpeasSuch a delightful snack. Chickpeas get nice and nutty when roasted and with a touch of seasoning they're simply delicious!

Herby RoastiesRoasted potatoes are always a delicious idea. They pair perfectly with any dish and any flavours you can think of. These taters are simply seasoned and coated with fresh herbs for a light and delicious roasted flavour.

Chili Corn Stuffed Bell PeppersStuffed peppers are not only visually delightful, but they are so fantastic to eat. This recipe has bell peppers stuffed with a chili spiced corn mixture and baked until tender and scrumptious. Pairs wonderfully with a fresh salad for a perfectly balanced meal.
