The following recipes are recipes that I have made over and over again. They are hearty and very delicious. Learning to prepare healthier foods isn’t hard, but it’s sometimes different from what you’ve known in the past. Although, it may seem like a big challenge, it won’t be long before you’ll be zipping through your kitchen fixing mouth-watering meals.

I applaud you for taking the necessary steps toward better health. The Chinese Proverbs says, “Give a man a fish and you feed him for a day. Teach a man to fish and you feed him for a lifetime.”

This dish was inspired by my brother Jarvis and his wife, Monica. They both are vegans. One day Jarvis asked if I wanted to sample the dish. I was very impressed because it truly tasted like tuna. Of course, I had to put my own spin to it, by adding lemon juice and celery.

Prior to becoming a vegan, I went on a Women's Retreat and during the retreat, there was a cooking class. We were taught how to make an Eggplant Parmesean Casserole. I wasn't too excited about the dish because I really wasn't into eggplants. Boy, was I in for a surprise! The dish was delicious. Several of the ingredients in the following recipe have been substituted to make this a vegan dish. Enjoy!

Hi Brenda, So far, I have tried the “Vegan Chick’n Stir-Fry” and the “Baked Sweet Potato Fries”. These dishes were quick and easy, plus they are healthy and taste great! I plan to try the “Make it Yourself Burrito” next. Thanks for recommending these great recipes!
