Better-Than-Tuna from the SeaThis dish was inspired by my brother Jarvis and his wife, Monica. They both are vegans. One day Jarvis asked if I wanted to sample the dish. I was very impressed because it truly tasted like tuna. Of course, I had to put my own spin to it, by adding lemon juice and celery.
Spicy Garlicky GuacamoleWhen I found out my daughter was going to the store to purchase store bought guacamole, I had to show her just how easy and healthier it was for her to make her own. I love making this dip. It's quick, easy, tasty, and can be used on other foods such as green salads, burgers, etc.

Eggplant CasserolePrior to becoming a vegan, I went on a Women's Retreat and during the retreat, there was a cooking class. We were taught how to make an Eggplant Parmesean Casserole. I wasn't too excited about the dish because I really wasn't into eggplants. Boy, was I in for a surprise! The dish was delicious. Several of the ingredients in the following recipe have been substituted to make this a vegan dish. Enjoy!

Garden Salad with Orange BangI often refer to myself as a "Salad Monster." I will devour any bowl of raw veggies that are placed before me. What's ironic about this is the mere fact, that as a child, I despised salads and would shake my head when watching my mother eat those forbidden veggies. Since becoming a vegan and developing a vegetable palate, I eat raw salads for breakfast, lunch, and dinner.

Apple PieMaking a transition from unhealthy to healthy eating can be somewhat daunting. My significant other has an incredible sweet tooth and in order to get him to eat healthy, I had to do some research in order to find and produce a healthy dessert.
