This book is dedicated to the friends and family who helped eat their way through all of my vegan dishes every weekend.
Those that suffered the fate of being on video audio, and photograph after photograph as well as getting their words published in my blog. You all gave me the strength to keep pushing through to recipe 100.
It’s also dedicated to all of the animals in the world. May we realize their worth here on this planet with us, and understand that they are also living beings to respect. They’re not ours to eat.

Pan Fried CornbreadAh cornbread. We know it as that stuff that’s usually pan fried in animal fat. Yuck! This much tastier version fits the bill for vegans and omnivores alike.
Bread Bowls - For anything to fill!Who doesn’t enjoy putting soup, stew or chili in a bread bowl, especially during the chilly days of fall and winter? Here we make them w/o butter, eggs or milk to put your favorite vegan soup, stew, chili, or dip in!
Bluebirds Of Love - Birdseed RollsFor the birds?! Yes, and people alike. Filled with healthy seeds and sweet agave, this bread really satisfies with a hearty meal!
Soft Pretzel BreadPretzels. NOT laden with butter! I use these for sandwiches, but you can eat them plain with a little kosher salt too. Pass the mustard and melty vegan cheese, please!
Mac and CheezeMacaroni and cheese (because of the cheese, clearly) is one of the most un-vegan items out there. Modern science of plant foods has made ‘cheese’ for us a habit again. This is the most decadent mac and cheese I know!
Cheeze Souffle'A soufflé is normally made of eggs, and a cheese soufflé pulls almost a triple whammy with cheese, milk and eggs. We can change that and it’s still yummy!
French Fries and/or Cheezy FriesPotatoes in and of their selves are vegan, but they can get extraordinarily unhealthy when you fry them. In this instance, we’re baking them to a golden, healthier version, and possibly making them less healthy by dolluping them with vegan cheese. Hey, sometimes you gotta do it!
Cheezy Scalloped PotatoesTraditionally scalloped potatoes are cooked in milk and cheese. In this version, we make them creamy without either of those un-vegan items!
German GoettaGoetta is a German breakfast sausage that blends the textures and flavors of pork, beef, whole grain steel-cut oats, fresh onions, and herbs. Umm, yuck. But if you have to have your goetta, you CAN do it vegan! Give it a try.
Mashed Potatoes and GRAVY!Mashed potatoes are usually made with milk and butter and topped with meat gravy. In this instance, we can substitute something for everything! YUM!
Victoria's Baked Vegan StuffingStuffing quite often has chicken broth and sometimes meat in it. This one is a ‘turkey’ version and its honorary name from Victoria the Turkey who lives happily on a sanctuary.
Peyton's Stuffed Carnival SquashStuffed squash is usually filled with chicken broth. Here we utilize veggie broth, and it gets its name from Peyton, who lives his happy life on a sanctuary.
Green Bean CasseroleTraditionally, filled with milk and chicken broth, we veganize this one into a yummier, healthier version. Now I've made this once or twice, but I have to give kudos out to Analeah Clark who rocks this particular recipe of mine. :)
Potato SaladPotato salad is usually filled with eggy mayo. In this version we utilize vegan mayo for the same great taste, only veganized!
"Egg" TartsNormally, Egg tarts are sweet eggy custardy goodness made of eggs and in a tart type shell laced with butter, we blast that recipe out of the water with our own vegan version. Try it for yourself.
California RollsNaturally, California rolls are packed with crab and cream cheese for this Asian delight, but check it out. No shellfish or dairy needed here for the same taste!
Coconut Creamed SpinachNormally, creamed spinach is a conundrum mixed with healthy spinach and not so healthy cream. Veganize it, not only because it’s healthier, but it ALSO tastes fresher!
"Crab" CakesCrab cakes of course are filled with crab, tartar sauce. What’s a vegan to do? Don’t despair, we have the answer right here. It’s safe for crabs to come out to land again! *For Mary Beth*
Corn DogsA hot dog is nowhere near what you want to think it is (gross) and battered eggs to top it? That’s a corn dog. It’s confusing why kids love this so much. Never fear, a better ‘corn dog’ is here! Try this one on the kids for size!
Eggnog Ice CreamWhoa, eggs and cream? Could you get any less vegan? If you love eggnog ice cream but can’t have it anymore because of the eggs and cream, then here’s your recipe!

Christmas Breakfast CasseroleThere is NOTHING about this dish that would be vegan. Eggs, Bacon, Sausage, Cheese, Cream! No way! Now, veganize it and tell me it’s not just as yummy! This is a VERY rich treat and utilizes the "Vegg” vegan egg yolk. If you do not HAVE the Vegg, you can substitute nutritional yeast with a little Kala Namak (Indian Black Salt found at international markets and online) to get the egg yolk flavor.
Thanksgiving Pumpkin LasagnaThe flavors of Thanksgiving rolled into lasagna. That means ‘turkey’ and butter, too, all vegan, all the time!
Sweet Agave Easter "Ham"Ham is a pig and eating pigs is not vegan. This one requires a little work, but is well worth it in the end!
Cadbury Style Cream EggsThe original Cadbury Cream Egg is normally made with milk chocolate and unvegan cream. Not this version! Enjoy Easter cream eggs again!
Chick'n Cordon BleuChicken cordon bleu is not only chicken AND ham, but it’s covered in, and seeping with cheese and cream galore. I like to use the word ‘seeping’ it’s very un-pleasant. However this vegan version is BEYOND pleasant! Try it at your next potluck!
Pulled BBQ Chick'nDon’t pull chickens! Imagine if someone pulled you! I remember when my sister used to pull my hair. It hurt. Pulling chickens is not a necessity. Let’s stop the insanity with this BBQ vegan chicken! Pull pea protein instead!
Chick'n and DumplinsThis one has gotten rave reviews for me. I mean – people BEG me to make it. It’s veganized straight out of the Cracker Barrel recipe too. It’s amazing and every now and then when I make it for myself, I tend to binge! I bet you won’t miss the original!
Chick'n Curry with Pineapple – Thai PanangThis veganized Thai dish gives a run for its money to the original Thai version. So good! Especially with saffron rice!
Un Poulet Au PortoJulia Child’s original ”Poulet Au Porto” recipe – veganized. This took a lot of blood, sweat and tears, but worth every bite. (Truth – I cut myself while making it, It was super hot in the kitchen I was in, and after drinking a shot of port – I think I cried! Don't even ask about the Cognac.)
Dragon Wing PizzaBefore one of the coolest vegans I know went vegan, we veganized this version of ‘magical dragon wing’ pizza – we even had a dragon conjure up vegan dragon wings and breathe fire into our hot sauce. Chick'n Pot PieWho doesn’t love a good chicken pot pie? This was a staple for me before veganism. But I don’t have to worry about a thing now, because – look ma! VEGAN chicken pot pie!

Turk'y TetrazziniTurkey Tetrazzini is apparently a staple outside of any other kind of tetrazzini. But guess what? This one (creamy and all) is vegan and simply amazing.
The Monte CristoThe Monte Cristo is filled with meat and more meat – namely turkey, along with an egg wash - no vegan there. But this one rivals even the best Monte Cristo!
Croque Monsieur with BéchamelThis ridiculously rich, French sandwich normally utilizes Turkey and Ham and a crapload of cheeses. Does this look vegan to you? Well good news, IT IS! And in all its richness – you won’t taste a better vegan sandwich! Viva La France!
"Beef" RagoutBeef Ragout, cheese soufflé, pie and.. Oh yeah! Beef Ragout doesn’t have to come from a cow you know – or a beast for that matter! ;)
Shepards PieThe history of shepards pie would be a bleak one if you’re an animal lover. But if you loved this before vegan – I can guarantee you’ll love it even more now! Like maybe to the moon the cow jumped over, and back!
Swedish MeatballsTaken straight from the IKEA recipe, these veganized Swedish Meatballs are better than their uncompassionate counterparts. Now you don’t have to get flustered when you go visit your local IKEA store because you can make it at home – more compassionately! Danke’

Cincinnati Style ChiliCincinnati Style Chili is almost world famous. The flavors take some getting used to, but ask the good folks of Cincinnati to tell the difference. My daddy can’t. Pot RoastPot roast is wintertime favorite and also filled with beef. The plates may be deceiving here, but there’s no deceiving the vegan! This was adapted from a recipe from Disney’s 50’s Prime Time Café! Enjoy watching my little helper Lotus put together plates for me in the video!
"Beef" StewNo one will miss the animal products here. This rich and 'beefy' stew really satisfies with chunks of vegan ‘beef’ and veggies galore. It was a hit at the family dinner especially in those bread bowls!

Italian Sausage AlfredoWe used homemade spinach noodles in this wonder. “Sausage” and “Alfredo” go great together – Especially vegan!

Schnitzel With NoodlesLet’s sing it now – Doorbells and sleigh bells and…. 'Tuna' Noodle CasseroleCreamy and delicious, this vegan tuna noodle casserole has all the punch of the un-vegan one, but with a more compassionate – fish-less, twist! Talk about Dolphin free and you get to make your own cream of mushroom soup too!
'Fish' TacosI always thought the concept of ‘fish’ tacos was a little un-appealing. These were good, and I bet they’re amazing to a fish taco lover. But I’m still lost on the concept. Regardless… have at it, the compassionate way!

'Crab' AlfredoI made the noodles for this one. Crab Alfredo was one of my favorite “Red Lobster” dishes so I modified it from the very same Red Lobster recipe. I think mine is better – of course.

Fried 'Goose' (Tempoose)You don’t need to fry the Christmas Goose! Here I’ve paired this delicious dish with veggies and a cupcake – this was a wonderful Christmas dinner, or can be dinner any time!
Pasta With Vodka Cream SauceI love love LOVE Vodka cream sauce! This veganized version is no exception. Pair it with a big hunk of garlic bread baked!
Black Bean Veggie BurgersPaired with fries, these ‘burgers’ are satisfying and have a little bit of a Mexican punch to them! Pile on the veggies, let’s grill out!
Fried Green Tomato SandwichI modified this recipe from The Hungry Bear café in Disneyland’s recipe. I have to say, it’s just as magical as the Disney version, but there’s no egg or milk in it! Yay vegan!
GREEN Pasta and PestoRegular pesto has cheese in it – this version has vegan cheese and is just as amazing as the un-vegan version! Wow your guests and serve it with green spinach pasta!
Equine BurgersMade during the time this whole ‘eating horse meat’ phase was upon us. A grouping of stuff horses eat morphed into a burger. Make like a horse and eat this instead!
Creamy Mushroom MutterThis used to be one of my favorite dishes at an Indian restaurant by where my office was. The place closed down, but it’s okay – because I can make the vegan version – AMAZINGLY!
Home Made Seitan (for all your meat substitutes!)Homemade seitan is a pain worth its weight. It’s a lot of work, but this amount of seitan will last you a while. It’s versatile in about any dish you could use it for! Give it a try!
Bella's 'Angeled Eggs'Bella was the inspiration for these ‘deviled’ eggs. While she was a lil devil here on earth – she’s now an angel, and as such I gave her this tribute – she loved deviled eggs, and these will honestly wow any guest you’ll have at any party! Vegan MochiI’m sure Mochi is amazing with something besides green tea ice cream, but the one I made had the unfortunate event of having green tea ice cream in it. This vegan mochi is great – but try it with a different ice cream. You’ll thank me for that one.

Little Debbie Zebra CakesRemember these? Yummy yellow cake with a cream filling topped with a shell of white chocolate. Yeah me too – but they’re again, so not vegan. I’ve vegan’d them up though – so you can enjoy them ALL over again!
Regina's Un-Poisoned Apple TurnoversNow, we all know I’m not one to poison one of my best friends, but this one never saw it coming! In one of my Disney veganizations I took the exact recipe from the online source of Regina’s (Evil Queen in Once Upon a Time) original turnover recipe, and veganized it! Mini Apple Or Cherry PiesWhen you’re in the mood for just a bite, these little quick things will do the trick every time. Pair them with coconut milk ice cream and you’ve got one heck of a dessert! I have a mini pie baker, so that's where these come from. They're also great as one large pie.
Crustless Fairytale Pumpkin PieThis was made from a “Fairytale” pumpkin, but for easier results I suggest cooking a pie pumpkin (or a “Spookie”) for your pulp. You can also use canned pumpkin, but what’s the fun in that?
Caramel Apple CrispCrisps and cobblers remind me of fall, and this crispy autumn treat is filled with vegan caramel – so yummy.
Grandma Grein's Banana Cream Pie with no fail pie crustGrandma’s banana cream pie is the best, and I think a few of us grandkids have tried to mock it. But with little ‘grandma’ result. I dunno if I’ve made the grade for banana cream pie, but I know as far as VEGAN banana cream pie, grandma would most definitely be proud. * For My Grandma – who would have eaten everything in this book to make me happy. *
Little Debbie Oatmeal Cream PiesYou know what I’m talking about. Little Debbie used to tease you with these as a kid. So not vegan. But guess what? They are now!
S'Mores CookiesWhat could be better than sitting by a campfire, roasting marshmallows and mooshing them between chocolate and graham? Well, these cookies! Rainbows of vegan love is the brainchild of Sheri Fuqua – and a guide on the super easy way to eat all your favorite non-vegan foods vegan. Originally created as a way to get her favorite foods by way of veganism and also to transition her at a more difficult time in her life to help her find that pot of gold at the end of her rainbow. Sheri hopes to pursue a career in helping others see that being vegan doesn’t mean sacrificing anything – in every sense of the word.
This book is dedicated to the friends and family who helped eat their way through all of my vegan dishes every weekend. Those that suffered the fate of being on video audio, and photograph after photograph as well as getting their words published in my blog. You all gave me the strength to keep pushing through to recipe 100.
It’s also dedicated to all of the animals in the world. May we realize their worth here on this planet with us, and understand that they are also living beings to respect. They’re not ours to eat.
