Albondigas SoupAlbondigas is Spanish for meatballs. These little Mexican meatballs make for a hearty soup. Serve it with crusty bread and a crisp green salad.
White Chicken ChiliMy husband loves the white chicken chili at the Cheesecake Factory. This is pretty similar. It tends to be spicy, so adjust heat as desired.
Creamed Potato SoupI like to serve this before our Christmas dinner, and garnish it with cooked Italian sausage crumbles.
Emeril's Chuck Wagon ChiliThe original recipe calls for chuck roast, but I prefer ground beef in my chili. Either way, this is an excellent chili. If you prefer to omit the beer, just substitute beef broth or water.
Italian Sausage Soup with TortelliniThis is one of my favorite soups. Italian sausage is optional; it tastes great with or without it. I prefer to cook the tortellini separately, then add it to the soup bowls individually. That way, they don't get too mushy.
Ranch SoupI got this from a friend I met on our tour in Hawaii, who grew up in South America. This is such a versatile soup! Basically, you can use any vegetables you have on hand. Spice it up as much or as little as you want. It's filling enough to be a main meal. This is one of my family's favorite soups.
Roasted Tomato Basil SoupWhen I have more time to make a really rich and robust tomato soup, I turn to this one. Try it with "The Best Grilled Cheese" by the Pioneer Woman. You will never eat a better combination!
“Good soup is one of the prime ingredients of good living. For soup can do more to lift the spirits and stimulate the appetite than any other one dish.” Louis P. De Gouy, "The Soup Book" (1949).
I find nothing as heartwarming as a good soup, especially on a cold fall or winter evening . These are my family's favorites.
