Lisa's Personal Food Story:
"I was about 160 lbs and getting bigger. We had hired a personal trainer but every time I weighed in I was gaining weight, even with my vegetarian diet.
One day, I got very sick after my son's birthday celebration at a nearby pizza joint.
It was weeks before we learned that the bloating and excruciating stomach pains were from a newly developed gluten allergy from the pizza I had eaten.
Now, not only do I not eat meat but I can no longer eat bread or pasta.
I was frustrated during dinner time watching my family enjoy textures and flavors that I couldn't enjoy so I started creating ways to eat like them without eating like them.
I wanted the taste of buffalo wings, lasagna, black-eyed peas and greens but without the meat.
Because I love the flavor of the "meatarian" foods but I hate meat I started figuring out ways to create the same flavors without compromising my diet.
I now weigh less than 130 lbs. I wear anything I want while still enjoying great tasting food. And I this cookbook will help you do the same!" -Lisa McClendon

Asian Chili Collard GreensTHE BITTER SWEETNESS OF LIFE Affirmation: "Everything good and bad happening in my life is working together for my good!" My Asian Chili Collard greens are truly a reflection of the sweetness of life and the bitterness. Recently, I was washing clothes and that day had not been going the way I'd had hoped. I had just snapped on my daughter for leaving the kitchen with something on the stove and I was frustrated because I had yet to find someone to play basketball with my 12-year-old son. I started feeling sorry for myself. Then quickly I said, "Lisa! Uh un. You don't get to feel sorry for yourself." Then I looked around my laundry room and began to say aloud the things that I was thankful for. I was thankful for the laundry detergent to wash my clothes. I was thankful for the blankets that I was washing, they comforted me and my children when we watched movies together. Then I looked at the water running in the washer and my thankfulness increased because I remembered being a young girl and our water would be off days at a time. I remembered my parents struggling to keep the water on and here I was a single woman raising 2 children and my water and my lights had never been cut off. There is always food to eat. We have a nice car to drive. It was the tough times that I endured as a child that made me strong enough to deal with life now. Then I smiled, realizing how sweet the bitter times had made me such a strong woman now. Bon' Appetit!
Curried Black-Eyed PeasI CAN DO IT FOR MYSELF Affirmation: "People can only give to me sometimes but I can give to myself all the time." I started this craving for beans but I didn't know how to cook them outside of heating them up out of the can. So I employed the help of a distant aunt to cook them for me. She'd cook them over the weekend then I'd pick them up. Over time, the gas to get to her for my pickup was not making sense. I thought to myself why not learn to cook them. I had been cooking everything else but it never dawned on me that I could learn to cook my own beans. I went to the store and bought the black-eyed peas. Then I started researching to learn how to make black-eyed peas myself. Once I was confident in what I had learned, I started experimenting with seasonings that I liked. CURRY TO THE RESCUE!!! A bean lover and a curry fanatic, it just made sense. I soon discovered that not only could I cook black-eyed peas for myself I discovered that I actually liked mine better. Bon' Appetit!
Quinoa and Three Bean ChiliTHE BRILLIANT YOU Affirmation: "Every part of me is amazing!" You know what I like most about this quinoa chili? It's textures. Who needs meat when you can have the incredible textures of the quinoa along with the firmness of the black beans and the softness of the great northern beans? That is exactly what makes us all unique. While there are so many physically beautiful people on the planet, what makes us special is that no one person's inner texture is just alike. Only you think like you, smile like you, love like you, give like you. There are no 2 people alike. Even as twins, the outer makeup will still make them different. Can I challenge you today to embrace all of your textures? And never reject or be afraid to be just you. The BRILLIANT you! Bon' Appetit!
Eggplant LasagnaALL BY MYSELF Affirmation: "My life is so beautiful I can even enjoy it alone." My eggplant lasagna is one of my few dishes that I can literally eat the whole pan alone. I know because I've done it once or twice. Well, maybe 3 or 4 times. HEY! Don't judge me. Funny thing is I use to be that person who could not enjoy anything in life, not even life itself without someone else being around to share it. After my divorce, I found myself alone. Very alone. I didn't want to be alone. I was afraid to be alone. I hated being alone. Then I started doing weird stuff like taking myself to dinner and a movie. I started going to the store alone to window shop. I even started having conversations with me. And while it started out feeling weird, I didn't realize that I was simply getting to know me. Soon what I thought was weird became the norm for me. I begin to enjoy my own company. I even started becoming selfish with me. I didn't want to share me. Here's one thing I learned on this journey. Before I can expect anyone to want to enjoy my company I must first learn to enjoy it myself all by myself. Bon' Appetit!
Buffalo Mushroom WingsMAKE IT HAPPEN Affirmation: "Whatever I want in life, I can and I will make it happen!" So I'm standing in line at a pizza joint getting my kids their Friday night pizza. Suddenly I looked at the wall and what did I see? Juicy hot wings! But I hate meat. As my mind reminisced about the flavor my mouth started watering. Then I started thinking, "I gotta figure out how to make that in a way where I can eat it." By the time I got home I had figured it out. Often times we make the mistake of look for people to make things happen in our lives. Unfortunately, life doesn't always work that way. The world we live in now, everyone has their own dreams and agendas with little to no time to invest in yours. But guess what? No one can be as big of a cheerleader for your destiny, goals and dreams as you can. What is it that you want out of life? What and who are you waiting on? Can I challenge you to use the resources that life has given you and go make your dreams happen even if that dream is trying to make buffalo hot wings out of mushrooms? Stuffed "Greens" WrapsGET IT IN Affirmation: " I deserve all of life's goodness." These wraps are flavor-FULL! Packed with some of my favorite sauteed veggies. Say it with me, "FLAVA FLAAAAAVA!" Just as it should be and just as our lives should be as well. The darkness of life is always throwing us gloom and chaos, but we have the power to pack our lives with goodness. The goodness of love, positive thinking, giving to others and even allowing ourselves to receive from others. Take each day to pack as many good things as you can into your own life: a good book, a phone chat with a friend even this "Stuffed Collard/Chard Wrap," with family for dinner. Bon' Appetit!
Stuffed Eggplant PizzaLETTING GO Affirmation: "I will open my hands to let go so that I can receive." I can't help but hear Frozen's "Let it Go," as I share this. Pepperoni was the hardest meat for me to give up. It was the one thing that truly stopped me from being able to say I was a vegetarian. And as soon as I learned about pepperoni soy alternatives that tasted just like pepperoni I developed a wheat allergy. So much for pepperoni! There are things in life that are just truly dog-on hard to let go of. Whether it's bad for you, not the right time for you or just plan ole don't belong to you it's hard letting go. Then we try to replace those things with cheap replicas until we face the truth that we need to let that go as well. The goodness of life yet and still has a unique way of giving us what we need when we learn to let go of what we don't need. It's as if our life somehow seems to accelerate on the path to greatness when we give ourselves permission to just simply let some thing's go. So go ahead and release it. Let it go! Bon' Appetite!
ASIAN CHILI STUFFED MUSHROOM BURGERA LOT GOING ON! Affirmation: " I will slow down and enjoy my life." I'm a 70's baby. And if you are a 70's baby like me, you will probably agree that life is truly a lot faster and a lot more complicated today then it was back then. I'm constantly feeling like, "where did the time go?" The days seem to be shorter. We look up and we missed a loved one's birthday because we forgot or we didn't know that a dear friend was expecting a baby. Life is so precious, but we have to learn to slow it down to appreciate it. There are a lot of things happening and those things tend to distract us from what really matters. Can I challenge you today to just slow down? Look at the trees, go stand outside and feel the wind on your face, or simply take a moment to laugh at a joke. Don't be so busy that you miss your own life. Bon' Appetit!
SAUTEED MUSHROOM TOMATO GRILLED CHEESE SANDWICHSAY CHEESE Affirmation: "I will smile today because it makes me feel great inside." Can you do me a favor? Before you keep reading just smile. Now bigger. Hold it! Ahhhhh! Wasn't that amazing it? I bet you are still grinning. That is the power of a smile. Not only does it lift your mood but it has the ability to lift the mood of others. I'll just get straight to the point. You were blessed with the beautiful ability to smile and your smile will truly invite the sunshine in. So when you open the curtains in the morning to let the sunshine in and don't forget to smile while you are at it. Bon' Appetit!
FROZEN BANANA ICE CREAMHOW SWEET IT IS TO BE LOVED BY YOU Affirmation: "I love me some me!" We spend a lifetime trying to get other people to love us, but do we require that from ourselves? Without realizing it and not until I became a single woman again did I recognize that I had mastered the art of abandoning me. I was there for everyone else but I wasn't there for myself. I knew how to look out for other people's desires and needs as well as their feelings but always at the expense of my own. The greatest Earthly love is self-love. Do something for you today? Ask yourself questions like, "How are you?", "How are you feeling today?" "Is there anything I can do for you or get you?" Then listen and respond. Bon' Appetit!
Southern Smothered Mock Ox-tailsThis meal is one of my food recreations. My daughter and I saw a recipe online featuring oxtails. My daughter yelled, "What is that?" I said, "Oxtails." She was so disgusted at the thought of someone chopping off an ox's tail. She said in shock, "That's just mean!" I laughed as I began to pull out my mushrooms from the refigerator having already had a plan in mind to recreate those oxtails.
