Mexican Quinoa Lettuce Wraps! GF, V, BED! Now, we’ve all had Lettuce Wraps from PF Changs. Those amazingly delectable, salty, crunchy, nutty, Asian-style lettuce wraps. You can’t go to PF Changs and NOT order them – that is a sin again mankind. Unless, of course, you are a gluten-free vegan with food allergies on the Body Ecology Diet…haha. Then, you actually CAN go to PF Changs and NOT order their Heaven-sent Lettuce Wraps!
So I got to thinking….why do these lettuce wraps have to be Asian? What about making them MEXICAN?!? This is great for Cinco de Mayo, and Mexican cuisine is easy on the Body Ecology Diet!….Enter: Mexican Quinoa Lettuce Wraps!
Carrot Dessert Pudding! GF, V, BED, SCD I know what you’re thinking — carrots??? But Happy Tummies, have I ever led you astray? Let me preface this by saying that I am addicted to this little treat. I have eaten this for lunch for the past 5 days in a row. I’ve gone through 2 huge bags of organic carrots. And I’m proud:) My mom tried this, and loved it. Her quote, “I know why you like this: Because it tastes like pumpkin bread batter.” Couldn’t have said it better myself. It’s hard to believe that it’s made of carrots! Because it is SO delicious and luxurious! And — it’s gluten free, vegan, Specific Carb Diet and Body Ecology Diet friendly!
Broccoli "Cupcakes" with Carrot "Frosting!" GF, BED, V Sometimes, things aren’t what seem….Like this “cupcake”:) It’s actually made of veggies!!! And it’s savory! Broccoli Millet “Cupcakes” with Carrot “Frosting!” They were so whimsical and fun! And absolutely delicious! And they’re gluten-free and Body Ecology Diet friendly with a Vegan Option!
Gluten Free Pad Thai! (Vegan Option!) Tonight for dinner, I made Gluten Free Pad Thai. It was FANTASTIC! (if I do say so myself) :) This was so delicious, we were all practically licking our plates. Spicy, sweet and sour all come together in a zesty symphony of flavors that keep you coming back for more!
Mexican Sweet Potato Gratin! GF & V w/ BED option! Mexican Sweet Potato Gratin!!
Layers of sweet and spicy sweet potatoes, topped with cool and creamy guacamole! And it’s Gluten Free, Vegan, and Maker’s Diet friendly! For a Body Ecology Diet substitution, use Red Skinned Potatoes!
Apple Stacks! GF, V, SCD! Apple Stacks!!
Sweet and creamy mashed acorn squash sandwiched between a crisp honeycrisp apple slice and a chewy roasted beet! Absolutely heavenly!
And they're Gluten Free, Vegan, and Specific Carb Diet friendly!
Pesto Pasta Pie! GF, V, BED! I made a baked Pesto Pasta Pie – SO good! Topped with chewy roasted radishes and carrots. It tasted so fresh and delicious! What happens to the spaghetti when it’s baked is that the top gets really crunchy, while the bottom becomes soft and just absorbs the pesto beautifully! Eating it was just fabulous – in one strand of spaghetti, there’d be a crunchy part, and a plump, soft and chewy part. And if you’ve never had a roasted radish, you must try it! Raw radishes have a spicy bite to them, but when they’re roasted, their natural sugars release and they caramelize! They become soft and super sweet – almost like candy! And, it’s Gluten Free, Vegan, and Body Ecology Diet friendly!
Sweet & Spicy Stuffed Butternut Squash! GF & Vegan! Sweet & Spicy Pear Quinoa Pilaf stuffed inside a beautifully roasted Butternut Squash! The nutty quinoa with the zingy-punch from the lemon and Dijon dressing was complimented perfectly by the underlying sweetness from the pears. This flavor combo paired wonderfully with the intense sweetness from the raisins, and the subtle backdrop of spice from the cinnamon and allspice. It was just fantastic.
And it's gluten free and vegan!
Carrot Cake Bites! GF, V, SCD, Paleo! These little bites are magnificent!! They taste like the hybrid of carrot cake and pumpkin bread batter. SO incredible! They’re chewy like dough, spicy, sweet, and have a wonderful texture from the ground nuts and carrots. And they're Gluten Free, Vegan, Specific Carb Diet friendly, and Paleo!
Spring Confetti Bowls! GF & BED! This little treat was just that...a treat! The flavors were so fresh and wonderful! And that dressing was so spectacular it should be illegal!! Rich and buttery from the almond butter, tangy from the apple cider vinegar, a touch spicy from the ginger, and beautifully sweet from the stevia! I’m not even kidding, I legit licked the bowl it was so good!! And it paired just perfectly with the veggies and the fresh cilantro! And they're Gluten Free and Body Ecology Diet friendly with a Vegan Option!
Cauliflower Pizza Crust! GF, BED, SCD, Paleo! The Specific Carb Diet was my "secret weapon" to tackle my Ulcerative Colitis inflammation. This grain, dairy and sugar free diet consists of only single-bond carbohydrates and is great for people with Colitis, Crohn’s, Celiac Disease, Irritable Bowel Syndrome (IBS), Autism, Aspergers, and anyone looking to lose a few pounds ;) And this pizza crust is a creative and delicious way to have a grain-free, SCD-legal pizza! This is an amazing cauliflower-crust pizza with sauteed zucchini and onion, and broiled tomatoes! UH-MAZING!! And did I mention, that it’s Gluten Free, Vegan, and SCD, with a BED option?! The crust was fabulous! It was crunchy on the outside, and wonderfully chewy on the inside! And it didn’t taste like cauliflower AT ALL!
Sweet & Tangy Lettuce Wraps! GF, V, BED, SCD! Sweet and Tangy Lettuce Wraps! SO GOOD!! Tangy, Sweet, Crunchy, Nutty, and Fresh all wrapped up in a cool lettuce leaf! This meal was terrific!! I honestly could have drank the sauce! The flavors were outstanding — It was tangy from the apple cider vinegar, sweet from the stevia, nutty, and slightly spicy from the ginger! It went perfectly with the cold, crunchy veggies! The creamy, rich avocado was so delightful too! And the cilantro finished it off with a bright, fresh accent!
Cauliflower Tortilla Tacos! GF, V, BED & SCD! Cauliflower Taco Shell Tacos! Stuffed with sautéed peppers and onions, guacamole and juicy tomatoes! They’re Gluten/Grain Free, Body Ecology Diet and Specific Carb Diet Friendly with a Vegan Option! The taco shells were so chewy and marvelous – you could not taste the cauliflower AT ALL! And you really could pick them up with your hands! They didn’t fall apart! The crunchy veggies with the luxuriously creamy guacamole was perfect too!
GF Mexican Lasagna! Mexican Lasagna: sautéed peppers and onions layered between tortillas then topped with guacamole. YUM!!!
Cincinnati Skyline Chili! GF & Vegan! Skyline chili, or Cincinnati Chili, is an institution in Cincinnati. People around here LOVE Skyline, and will eat it in any form. Classically, you eat a “3-Way”…which is spaghetti, chili, and a mound of finely shredded cheddar. Then, there’s the “4-Way”, which adds kidney beans, and the “5-Way”, which adds chopped white onions. Yes, this is the glorious institution that is Skyline Chili. So how do you take this amazing meat sauce and make it vegan?? Lentils! The fabulous, forgotten legume stands in perfectly for the meat — it is hearty, chewy and delicious. Sheer food bliss :)
Mango Fried Rice! GF w/ a V Option! The rice had a symphony of flavors! At first, my mom was v-e-r-y skeptical….mango and egg? But don’t be scared, my Happy Tummies!! You don’t taste the eggs! It just gives the rice a great texture, and acts as a binder! The mango was sweet, the lime was tart, which complimented the saltiness of the tamari (soy sauce), and the fresh cilantro. Fabulous!
Oatmeal Raisin Meringues! GF! Meringues…how do I love thee? Let me count the ways:
1) You are magnificently gluten-free!
2) You are a wonderful blank canvas to play and experiment with!
3) You are fat-free and a healthy alternative to your cookie cousin!
4) You are light and airy!
5) I can make you and clean up in less than an hour!
6) My tummy is happy with you!
The BEST GF Pesto Pizza! This crust did not taste gluten free. The texture, the flavor, the crunchiness and chewiness made this crust 100% delicious. I will go so far as to declare that I am no longer looking for a crust recipe — this is my #1. The outside of the crust was that crunchy, golden texture that everyone loves. Then the center maintained that crisp-chewiness. It was not at all dense, crumbly, cakey, or sandy like most GF crusts. Just good.
Veggie Curry over Millet! GF, V, BED! This meal was superb! Everyone thoroughly enjoyed it:) The flavors were so exotic and exciting! It’s spicy, somewhat sweet, a little tangy, a little creamy — just delicious! In fact, my parents joked that they could drink the sauce it was so good! And it's Gluten Free, Vegan, and Body Ecology Diet friendly!
PB & J Fruit Pizza! GF, V, SCD! A spectacular grain-and-sugar-free cookie base, topped with an almond butter and banana frosting, with a strawberry drizzle! And it's Gluten and Grain Free, and Specific Carb Diet friendly with a Vegan Option!
GF Onion Rings! GF Baked Onion Rings! Everyone loves Onion Rings, but when you're G-Free, it is nearly impossible to order them in a restaurant. Well fret no more! These were so delectable! They were so CRUNCHY!! Oh my Gosh! Crispy and amazing!
Curry Apple Quinoa! GF & V Quinoa is an ancient, gluten-free grain that is a superfood! It is a complete protein — containing all 9 essential amino acids. It contains magnesium, as well as copper and manganese, which are antioxidants! Easily digestible, it contains both soluble and insoluble fiber! Not to mention, it tastes amazing! The flavor was so complex! The first thing that hits you is the warm, spicy heat from the curry powder, and then you get a burst of sweetness from the raisins, and a zing of sweet tartness from the apples! All of that paired with the nuttiness of the quinoa makes it a real winner. And it's gluten free and vegan!
Seared Ahi Tuna with Chinese Stir Fry Gluten Free This meal was so wonderful. First of all, it is aesthetically beautiful with all of the vibrant colors from the veggies and the ruby red tuna. Next, the textures….oh my Gosh. The tuna was absolutely like butter. It melted in your mouth. So satisfying. Contrasting the tuna were the crisp veggies, and the sticky rice. Finally, the flavor. There was such a full, zesty Chinese flavor!
Cod w/ Mango Salsa and Zesty Cilantro Lime Wild Rice! Broiled Cod with Mango Salsa, and Zesty Lime Wild Rice!This meal was 100% delicious. It really is everyone’s favorite meal. It has so much going for it! It’s sweet, tangy, bright, fresh, and nutty! The mango is succulently sweet and juicy, while the cilantro is bright and fresh. The wild rice is nutty and crunchy, which is highlighted beautifully by the tangy lime juice in the salsa and echoed in the rice!
Gluten Free Monster Cookies! Growing up, my family would spend every 4th of July up at our lake home in Northern Wisconsin. And every summer, my mom would bring up a carload of her monster cookies (enough for 12 people to last all week)! As a result, her recipe was HUGE–we’re talking 12 eggs! SO, I decided to a) reduce the recipe to only 1 egg, and b) make them gluten and dairy free! But you’d never know. They were so moist and chewy, with the subtle toasty warm depth of the coconut. What’s not to love?
GF, Vegan Pesto Lasagna This dinner was fantastically delicious. The addition of the pesto to the lasagna made it just wonderfully decadent. It gave it a creaminess and freshness that can only be from fresh basil pesto. Then, the fresh medley of vegetables. Oh my Gosh. What a treat! The asparagus gave the dish this lemony, earthiness with a slight crunch! The tomatoes were slightly acidic, which complimented the pesto so nicely. The mushrooms were chewy and earthy, while the olives gave it fantastic salty pop! All and all, a fabulous meal. And Gluten Free and Vegan to boot!
Chocolate & Peanut Butter Rice Pudding! Everyone loves rice pudding. It is good warm or cold, and is delightful! Try my Peanut Butter and Chocolate Swirl Rice Pudding! This is both gluten-free and vegan and 100% delicious. Oh my goodness, what a creamy, decadent sweet treat! The arborio rice provides the creaminess without having to add cream and butter.
Vegan Curry Pasta! GF & V! This meal was absolutely fantastic. It definitely has a spicy kick to it! Part of the reason this dish is so wonderful is the contrasting flavors going on: The first thing that hits you is the warm spice from the curry! It’s a deep heat, that is complimented so beautifully by the sweet and chewy raisins! The asparagus gives a green, earthiness to the dish, while the peppers and carrots provide a slightly sweet undertone. The tofu also chimes in with a fantastic, caramelized, salty-sweet accent, all rounded out perfectly with the fresh cilantro and basil. Wow, oh wow.
Superfood Spaghetti! Gluten Free and Vegan! My Superfood Spaghetti brings the house down. It is made with the superfood Kale! Kale has so many health benefits. First, it is packed with antioxidants, which help to fight cancer and lower cholesterol. Next, it is an anti-inflammatory food, and is full of Vitamins K, A, and C! Finally, it’s full of minerals, such as calcium, iron, potassium, and manganese. It is just an amazing leafy green. This dish is not only gluten free, but Vegan too!
Mango Avocado Spring Rolls! GF & Vegan! The flavor and texture of these rolls made them irresistible. First, the flavor: there was sweetness from the mangos, freshness from the cilantro, tang and saltiness from the dipping sauce, and brightness from the carrots and cucumbers! And finally, the textures. The texture contrasts made these rolls. The veggies were crunchy, the rice paper was wonderfully chewy and sticky, the mangos were deliciously juicy, while the avocado was luxuriously creamy. They combined to form the perfect bite.
