Cookbook Recipe
Mixed Berry Syrup
I wanted to make an easy syrup to add to pancakes. I had a bag of frozen fruit in the freezer. It seemed like a no-brainer.

Cookbook Recipe
Shepherd's Pie
When the temperatures dip, we NEED comfort food. I saw a photo of Shepherd's Pie and knew I needed to create a vegan version. I hope you enjoy it!

Cookbook Recipe
Roasted Butternut Squash Soup
I love the Fall and I love to make soup. This seems like a complex soup, but it's not, and when you roast the squash, the flavors are much more intense and the house smells WONDERFUL!

Cookbook Recipe
Savory Lentil Loaf
I'm always searching for new ways to make alternatives for meatloaf. Adding things like sweet potatoes and tofu really helps to bind the loaf, while adding texture, protein and nutrients. This is a great dish for the holidays, especially Thanksgiving.

Cookbook Recipe
Mushroom Gravy
I love mushrooms. All of them. And I love gravy. What better than a marriage of the two ..? This is a great gravy. It's gluten-free as well as vegan and low-fat, but it's not short on taste. Add it to the Savory 'Meat'Loaf for a special treat.

Cookbook Recipe
Banana Bread
I've never considered myself much of a baker. Don't get me wrong -- I love baked goods. But I find the process of making them a little persnickety. Sometimes I find that vegan breakfasts can be kind of boring. I like a little something to have with my morning cup of coffee or tea. This banana bread is the perfect breakfast treat.

Cookbook Recipe
Turmeric Garbanzo Cakes
I love falafel, and I'm constantly trying to find new ways to use chickpeas. This is a falafel-cousin --- more like a veggie burger patty, really. So good. So simple. And SO good for you!

Cookbook Recipe
'Cheesy' Cauliflower/Tater Soup
Once the season changes from summer to fall (or a little sooner, actually), I am ready to experiment with soup. I love soup. I love the process of making it almost as much as I love eating it. I'd been missing the comforting taste and feeling of potato soup with cheese. I think this takes care of that need quite well.

Cookbook Recipe
Brussels Sprouts Slaw
I know, you say you don't like Brussels Sprouts. Something tells me you probably had them over cooked and under seasoned. Fear not. They're awesome and you need to eat them! This salad is simple, tasty and will change your mind about this veggie for good.

Cookbook Recipe
Wonderful Lentils!
Lentils are one of the 'perfect foods' -- they are high in protein, they cook fast (no soaking required), they are CHEAP and they taste great! I like to keep a few individual bags of pre-cooked lentils in the freezer. Then I quickly thaw them in the microwave and add them to various recipes.

Cookbook Recipe
Spicy Roasted Banana Squash
The trick to cutting open or peeling a banana squash (or butternut, acorn or any squash with a tough skin) is to cook it in the microwave for a couple of minutes. This will soften the skin a bit and make it easier and SAFER to cut and peel. This is a simple and tasty treat -- the house will smell good, too.

Cookbook Recipe
'Cracker-Crack' Corn
I don't know about you but I LOVE popcorn, and I even love caramel popcorn more. How awesome is it that it's possible to enjoy all of those sinful goodies, and still keep it vegan? This is a really easy recipe for caramel -- No candy thermometers necessary!

Cookbook Recipe
Roasted Rainbow Carrots
Roasted vegetables are SO good, and they're super easy. I love roasting vegetables, especially when it's cold outside. The oven warms the house up nicely, and it smells really good. I've used rainbow carrots for this recipe, but you can certainly use regular orange ones as well.

Cookbook Recipe
Easy Green Bean Pasta
Sometimes we just need a simple, comforting side dish. This is one of them. You can substitute any of your favorite vegetables for the green beans (broccoli, carrots, etc.)

Cookbook Recipe
Savory Orange Salad
Sometimes I forget how versatile fruit can be. It's really easy to throw together a delicious side dish using fruit. Why not give this a try?

Cookbook Recipe
Edamame and Radish Slaw
Edamame is a great source of protein. It's very versatile ... Can be used in both hot and cold recipes. This is a really yummy salad. It is good as a side, or as a complete meal.

Cookbook Recipe
Vietnamese Banh Mi Sandwich
Food trucks have made the Banh Mi pretty popular. I'm not a big food truck gal, but I do like recreating 'trendy-foods,' especially if I can make a vegan substitute. This is a really tasty sandwich. It does involve a few steps, but it's totally worth it.

Cookbook Recipe
Jackfruit 'Pulled Pork' Sandwich
I'm all gung-ho for jackfruit. I think it's one of the best things since sliced bread. Really. So why not make a sandwich using jackfruit? Here is a super-yummy treat that tastes a whole lot like pulled pork. The best part about this sandwich is that it's meat free, and that's definitely the best thing since sliced bread. (This recipe does use prepared BBQ sauce. If you'd rather make your own, the are a gazzillon recipes online)

Cookbook Recipe
Veg-Nog Shake
It just so happens to be Christmastime, and what's better than a little sweet treat, like a Vegan 'Egg'-Nog Shake. I try not to use much processed food, but there are times when it is a necessity. This is one of them. It's super easy and it's super good.

Cookbook Recipe
Hummus and Pita Chips
Hummus is a staple in every vegan's kitchen. It's easy to make, it tastes great, it's super inexpensive and so good for you. Whip up a batch for snacking, or for a simple lunch.

Cookbook Recipe
Vietnamese Jackfruit Salad
Have I mentioned how much I LOVE jackfruit? It is such an incredible, versatile ingredient. This salad is really good and can be served hot, at room temperature or cold. It's not hard to make and it so 'meaty.'

Cookbook Recipe
Stuffed Acorn Squash
This is a great recipe when you really want to impress someone. Maybe you're having a dinner party and you want your friends to be impressed at how GREAT vegans eat ...? There is a little extra work involved in this recipe, but it's worth it.

Cookbook Recipe
Dilly Tater Salad
Who doesn't like potato salad? There's really nothing different about this potato salad, except for the mayonnaise. Any brand of 'vegannaise' will do. I like Follow Your Heart, but there are others that are just as good. You can find vegan mayo at Whole Foods, and a number of other health food stores. As far as I know, Trader Joes does not sell vegan mayo (boo!).

Cookbook Recipe
Jackfruit 'Tuna' Melt
Yes, another jackfruit recipe. I'm telling you, this stuff is THE BOMB! You will seriously have a hard time telling the difference between this concoction and real tuna, especially if you add the dried seaweed snacks.

Cookbook Recipe
Roasted Roots and Veggies
There's a recipe for roasted carrots in this cookbook, but I love roasted veggies so much that I thought I'd add another. You can really use whatever vegetables you like -- the more, the merrier!

Cookbook Recipe
Quick Kale Ragout
Kale is the new black, right? We need at least one kale recipe in this cookbook! Kale is a great vegetable. It's full of nutrients, is pretty inexpensive and can be used in many applications (stir fry, baked, fried, in smoothies, etc.).

Cookbook Recipe
Choco-Nut Cookies
These are really good. They're not super sweet, but they are great with a cup of coffee in the afternoon. Everyone needs a shot of chocolate every now and then .. Even vegans!

Cookbook Recipe
Pumpkin Spice Bread
Pumpkin isn't JUST for Thanksgiving! This bread is great any time of year. It's yummy AND pretty healthy, too. Instead of eggs, use a combination of flax seeds and water. This process creates an 'egg-like' binder that works well in baked goods.

Cookbook Recipe
Crunchy Chickpeas
Chickpeas, or garbanzo beans, are a vegan staple. They're fairly neutral in flavor and are very versatile. They can be used in many recipes to add protein. This snack is so good. Make a double batch -- they won't last long!

Cookbook Recipe
Easy Couscous Salad
Couscous is a super easy side to prepare. It's quick cooking and versatile. It can be used as a stuffing for mushrooms, squash, or as a lite salad. It doesn't get much easier than this.

Cookbook Recipe
Flax Crackers
Flax seeds are super nutritious. They pack a real punch! You can make your own flax meal from the seeds and use in addition to flour in baked goods. They're great to add to smoothies, as well. These crackers are really good -- serve with hummus or guacamole for some added yumminess.

Cookbook Recipe
Portobello Stew and Pasta
Portobello mushrooms are a vegan's answer to steak. They are 'meaty' and absorb flavors really well. This is a satisfying and comforting meal, great for any time of year.

Cookbook Recipe
Easy-Peasy Pancakes
I've said before that I don't like to use a lot of processed foods. However, when it comes to baking, I'm all for making things as easy as possible! Bisquick is vegan, however the recipes usually call for eggs and milk. I just don't add any dairy. These are really good, especially with my berry syrup. Well, they're good with bananas and regular maple syrup, too.

Cookbook Recipe
Corn Chowda with Sourdough Croutons
As a vegan, I think the one thing I miss the most is clam chowder ... Or CHOWDA. This corn chowder is a great substitution, and with the garbanzo flour, you'll be getting some extra protein. Give this recipe a try, you'll really love it.

Cookbook Recipe
Tofu Scramble
Most people think that vegans eat tofu all day, every day. Maybe some do, but I don't. There are some really great uses for tofu, and this scramble tofu breakfast dish is one of them. Yes, it's possible to have scrambled 'eggs' for breakfast.

Hello, and thank you for purchasing VEGAN EATS!

All little bit about myself ...

My name is Leslie Inman. I am a professional, freelance classical singer, a personal chef and a caterer. I am THE SINGING VEGAN!

For most of my life, I was a meat eater. And a dairy eater. I spent many years existing solely on high-protein diets with very little carbs. I also felt guilty about what I ate because I love animals passionately, and I believe that when I eat them, I am ingesting the suffering they've endured in the process of becoming food for humans. In a spiritual sense, I believe this is harmful to me, and to the planet. Until we as a global community change the way we eat, we will continue to perpetuate violence, war, hunger and oppression.

Perhaps you're interested in incorporating more plant-based foods into your diet. Maybe you want to do this for health reasons only. That's fine. I do hope, however, that as you do that, you will look more closely at the ethical advantages to a vegan lifestyle. I do believe it will change your life, like it has changed mine.

This is a cookbook for people who are curious about eating a Vegan/Plant-Based diet, but who are intimidated and stuck in their meat-eating ways. I want to create and share simple and delicious recipes that are ethically sound and healthy, as well as budget conscious.

10% of the profits from the sale of this cookbook will be donated to the Gentle Barn, an animal refuge/sanctuary north of Los Angeles, Ca.
