And I love to use coconut oil in everything I make so that is another ingredient that makes these cookies vegan and yummy. Plus, my new favorite sugar to use is coconut sugar. Vegan Pumpkin Chocolate Chip Muffins I had a Vegan Sweet Potato Recipe and decided to try it with pumpkin and chocolate chips instead. What a yummy decision that was. This recipe uses wholesome organic ingredients that nourish the body. Coconut sugar has a Glycemic Index rating of 35 as compared to raw sugar which is 85. Therefore, the sugar is absorbed slowly and does not affect blood glucose levels like other sugars. Plus, the slower the absorption the less likely it will go to the belly.
