Vegan Baked Walnut Eggplant BurgerOne thing about veggie burgers I've learned, you can use pretty much any kind of cooked vegetables, seasoned the way you like them, as long as you learn to bind ingredients together, holding power! I've experimented with various combinations, and this one has a great chewy texture, and holds together well. Of course the secret is the seasonings, as always.
Vegan Eggplant PizzaEggplant is one of most delicious, plant meaty and chewy vegetables that I have grown to love. It's very versatile and can be used in place of meat in many recipes. In this case, I used it in place of bread, to cut calories. It seems every time I eat if for dinner, I wake up 2 pounds lighter!
Juicy Vegan BBQ Eggplant SteaksI'm crazy over eggplant, and it makes a sensational transition away from meat as a vehicle for delicious seasonings. I'm hoping by sharing this one it will inspire another compassionate person to be vegan.
Vegan Oatmeal Craisin Banana Nut CookiesHow to transform a standard oatmeal cookie to vegan. Using flax, banana, and applesauce in place of fats and sugar does the trick. No fat, no sugar...still delicious! Enjoy!
Carol's Vegan Crackers and BiscuitsI love experimenting and transforming especially unhealthful recipes into nutritious vegan choices that you never need to feel guilty for eating. Since I love crunching a good cracker, especially one that is packed with protein to go with my veggie main course, or dip. Grab some crackers on the go, too, in case you're not sure vegan choices will be available. One of these biscuits will fill you up all day!
Vegan Chocolate Pudding or toppingAvocado's are one of my all time favorites since I ditched dairy. The rich creamy texture can replace that delectable taste you might think you have to do without, when you become vegan. Not so! Don't believe it? Give it a try!
Delicious Creamy Cashew MilkI buy nuts in large quantities to have on hand to make creamy sauces and milk. Be creative with flavoring; it's fun!
Cashew Cheese SauceI love rich and creamy dishes, and cashews are the vehicle to make that happen. Use this on pasta dishes, rice, over vegetables, and in lasagne for delicious 'ricotta.' Play around with the seasonings. Make it like this, or make it sweet for a dessert topping. Enjoy!
Vegan LasagnaEvery time I ask my family what they would like me to make, I get a request for lasagna. So, when I became vegan, I had to learn how to replace meat and cheese with delicious plant-based alternatives. I was a little concerned about pulling it off, but it turned out to be a grand success! Not only is it scrumptious, but it's good for the soul, knowing that it's cruelty free, and oh so healthful to eat!
Nutty Lettuce WrapsAlmond butter or walnut butter are one of my favorite things. I'm always thinking of ways to use nut butters with fresh veggies. Now, here's a wrap!
Vegan PizzellesMy dear mother taught me how to make pizzelles when I was very young, using a recipe that has been handed down for generations. I have carried on the tradition and make them every year with my kids for Christmas. We always have a fun time, cooking, laughing and eating. So here is my vegan transformation recipe, just as good if not better. And, we don't have to give up our tradition.
Stuffed Avocado Kale SaladAgain, this is an easy idea, packed with nutrition. It's important to eat dark green leafy vegetables every day, along with red, orange and yellow ones!! You won't believe the wonderful aroma radiating throughout your kitchen as you process the Kale...heavenly!
Vegan Stuffed PeppersI have fond memories of my eating stuffed peppers that my mother made which were so scrumptious. I had to try to veganize them. I'm sure she would be happy with this transformation.
Cantaloupe Apple Fig Breakfast- Nature's fast food!Figs are one of my favorite fast foods, packed with sweet protein. I buy them wholesale in 25 lbs. boxes for the best deal, refrigerate, and they last all year.
Kiwi Cashew Banana Fruit SaladI'm all for quick and easy healthful breakfasts to show how easy it can be to make the vegan transition. There's nothing better than Mother Nature's Fast Food.
Luscious Vegetable PlateThink going vegan is hard? No way! I love keeping it simple and as close to natural as possible. And what could be more beautiful! It's a feast for the eyes as well as the stomach.
Tasty Green SmoothieSmoothies are fun to make. Try out all kinds of combinations to suit your taste. I usually use half greens and half fruit for this kind of smoothie. Enjoy!
Apple Carrot SmoothieIt's fun to be creative and try all kinds of combinations of fruit and vegetables in a smoothie. I usually use what I can get in season at a a good price. This week Apples and Carrots were a deal, and also a very tasty combination!
Easy and refreshing uncooked Oatmeal and FruitMake this the night before and refrigerate for a quick, easy, nutritious and delicious breakfast.
Oatmeal Banana Carob Chip CookiesI love oatmeal cookies. I wanted to make them vegan, and learned to use banana to hold things together in place of eggs. That's all I needed to get delicious cruelty-free results. Yes, the egg industry is beyond cruel. Watch Earthlings.com movie, to learn more. I dare you!
Smoky Paprika HummusSince becoming vegan I depend heavily on hummus, for a quick dip, or as a mayo replacement in sandwiches. Sometimes I thin it down and use as a creamy sauce over veggies or pasta. It's just versatile and tasty. Make a big batch and freeze in serving sizes for future fast food.
Persimmon Walnut Smoky Maple Tempeh BreakfastThe closer to natural you eat, the more nutritious. Natures 'fast food' is beautiful, colorful, nutritious, and oh so very satisfying. This not a recipe per se, just a great idea to get you started on a compassionate vegan meal plan.

My transformation to a vegan lifestyle over the past 2 years has been an exciting and interesting adventure in cooking as well as learning many other things about how my choices affect the rest of the world, the planet, the animals, my family and myself. In order to make my transition feel more normal, my family favorite recipes have all been transformed with vegan ingredients.
