Preparing Vegetable Soup is something I truly enjoy and love to eat at least two or three times every two weeks. I use fresh vegetables available which may include one each of every color bell pepper, Italian Squash, Mexican Squash, Carrots, Celery and Potatoes. I prepare a huge pot of Vegetable Soup dividing into one quart portions to freeze until used.
