My recipes derived from late night cooking (between 2a.m. and 4a.m.) when I felt like a little something to eat. It often became a full meal with all the trimmings.

All the recipes are my everyday recipes I prepare on a steady basis and a few are family favorites. I love to cook and want to share some of my favorite dishes with everyone who loves to play in the kitchen.

This recipe is a substitute for Tuna Salad that I use when I want Salmon instead. It has a creamy texture with a little celery for crunch. I use Bear and Wolf canned salmon with Newman's Own Olive Oil and Vinegar Dressing, but you can use your own favorite brand.

Preparing Vegetable Soup is something I truly enjoy and love to eat at least two or three times every two weeks. I use fresh vegetables available which may include one each of every color bell pepper, Italian Squash, Mexican Squash, Carrots, Celery and Potatoes. I prepare a huge pot of Vegetable Soup dividing into one quart portions to freeze until used.

I believe the day I created this recipe I had a serious craving for salad dressing or was extremely hungry. For the following recipe I used Hidden Valley Ranch Avocado Dressing, Newman's Own Olive Oil and Vinegar Dressing, and Rice Vinegar (any brand).
