Looking for a recipe for Buckeyes. I am from Ohio and have lost my recipe for these. Hope someone can help me.

Anita here is a recipe for Buckeyes
Buckeyes
1/2 cup (1 stick) butter or margarine, room temperature
1 (1 pound) box confectioners’ sugar
1 1/2 cups peanut butter
1 teaspoon vanilla extract
1 (12-ounce) package chocolate chips
1/4 stick paraffin*
Cream the butter, confectioners’ sugar, peanut butter and vanilla. Form into small (buckeye-sized) balls and refrigerate overnight. Melt the chocolate chips and paraffin in the top of a double boiler. Stick a toothpick in the candy ball and dip it in the chocolate mixture. Leave part of the ball uncovered so that it resembles a buckeye. Place on waxed paper to cool and harden. The Buckeyes can be frozen. Makes 3-4 dozen
*Paraffin takes longer to melt than chocolate, so start it melting first.

Here's the recipe that my mom emailed to me
Buckeyes
1 lb butter
1 lb peanut butter
Melt over low heat.
Stir in 2 lb powdered sugar. Remove from heat, cooling until you can make into balls, working as fast as possible. (If mixture is too soft add a little more sugar.)
Heat 1/2 cake paraffin wax & about 2 cups favorite flavor chocolate. (May reduce or skip the wax if not concerned about beauty!) Drop balls in the chocolate and remove. These keep well or freeze well.
PS More than one cook helps! One can be balling and one can be dipping. It is tempting to make them too big and eat them all up immediately. |

Anita,
I see you have received a couple recipes.
I have one from a Brandywine Falls restaurant if you need another - but what I wanted to mention is that the last few times I have made them, I notice there is a challenge to balancing the need for powdered sugar to hold the peanut butter in shape and the danger of too much powdered sugar flavor.
Now, I don't use the paraffin mentioned in one of the recipes and that would help. I also use Jif as it has great flavor and texture - but also has a lot of sugar itself. I haven't tried it yet, but I was planning to use 'Simply Jif' the next time.
