I was just wondering who was canning, what you were canning and any special canning recipe you would like to share?
I am making muscadine grape jelly today. But so far I've made a LOT of jellies and jams, have made many salsa's and tomato sauces as well.
I also canned some sliced peaches and plums in light syrup to use in pies for the holidays.
Here's a muscadine grape for those who haven't seen them. They have a super thick skin you can't eat and lots of seeds. They are the sweetest grape I've ever had, but they are really only good for their juice. (They do make my favorite wines out of these in Duplin County) _________________ Following my gardening obsession here:

so far i am canning dill pickles, tomato, will be makeing pickle relish to can. sweet bread and butter pickles, made strawberry and rasperry jam and am going to make peach. also plan on canning apple cider in the fall.and pickled beets. _________________ Carolyn

| I made strawberry jam a few times. I had a lot of trouble with consistency. Most of the time it was too thin. I was amazed at all the sugar needed. Who wants to do a canning video for us and we'll put it in our canning mentor area? |

Oh man... if I read this 30 minutes ago I would have video's my muscadine jelly making!

Ok, I removed the image from my site, and re-uploaded it.
That seemed to have worked.

This spring I made some strawberry-apple-orange jam. It was amazingly good.
I found out that if you add an apple to any jam you will reach the right thickness very easily. Apples as well as citrus fruit contain more pectine which helps the jam to thicken more quickly.
How much sugar did you put?
My measure is usually 1 kg of fruit + 1/2 kg of sugar (sometimes less).
I'm thinking now about making some jam with autumn fruit, I like to mix apples, pears, peaches, grapes. _________________ Dajana

I did manage to do sliced peaches and pears. I got everything ready to cook to my salsa tomorrow along with some hot pepper jelly. I can't wait to photo and share all that!
I'm kind of bummed... I've sold more then 50% of what I've canned so far, and I'm trying so hard to keep up!
I may not have much for winter this year... but a girl's gotta do what a girl's gotta do... worst time in our life's for hubby to get a speeding ticket out of the state and I had to hire a lawyer who obviously isn't struggling for $$$!
