Hello all! This is my first post, and I'm excited to join such an awesome community.
I'm on a desperate search for a recipe...I need the recipe for the frosting that Kathleen King uses on her coconut cupcakes at Tate's Bake Shop in Southampton.
I have tried everything; the recipe she has for her coconut cake in her cookbook Tate's Bake Shop Cookbook does not use the same cake or frosting recipe as her coconut cupcakes. It's the fluffiest, creamiest, most delish frosting on those cupcakes, and I CANNOT find anything that is even remotely similar!
I've tried meringue frostings of egg whites and sugar, a frosting with butter and shortening, and another frosting with egg whites and butter. It's not a plain buttercream, it's not cream cheese. I cannot figure it out for the life of me!
If anyone has any insight or has tasted these cupcakes and can provide some guidance, I'll seriously be so ecstatic I'll hit the roof!

Thanks guys! I was excited to find Bake Space...I'm a cupcake FIEND, and I've already got a long list of recipes to try out. I've been lurking for a little bit and everyone seems so nice and knowledgeable.
If any of you guys live anywhere near Southampton, you've got to go to Tate's for the coconut cupcake. My girlfriend brought one home for me after her last trip up there, and I was really blown away by how light and airy the frosting was. Buttercream and cream cheese can be so heavy (although yummy), and this was just an entirely different frosting. I'm on a MISSION!!  |

Hello Jessica, First of all....Welcome to Bakespace! I know you'll really enjoy yourself and you'll find soooo many recipes to try! Everyone here is soooo nice and very helpful too! Speaking of helpful...seems that so far we can't help your on your mission for the recipe for Coconut Cupcakes BUT I did find a site that sells her the Bakery's Cookbook and they have an e-mail area if you have any questions. I went to the Tate's Bake Shop website and lo and behold, there is a "contact us" link. Oops! I sent them an email asking for help. I have no idea why this never occurred to me before. My girlfriend asked the baker in the shop, but she couldn't help her, so hopefully I get a more positive/helpful response from the website folks. Thanks for the idea, monkeybusiness!
Thanks also for the compliments on my avatar. I love kitties...I thought the little guy was pretty cute. Not as cute as my two babies, but still cute!  |
