Please excuse the beans, I was doing laundry, cooking, packing hubby's lunch and trying to get a shower all at the same time. I kept checking the beans and waiting for the water to come to a boil, suddenly I noticed a hissing sound and realized they had boiled dry. Sigh.
Anyway, chicken cacciatore, brown rice and lima beans. Hubby picked the beans, I didn't think they were a good choice with rice, oh well. What is every one else having? _________________ Patti

Yum Patti!!
I made this!!
Easy Pinto Beans and Rice
2 cups chicken stock
1 cup uncooked rice
1/4 lb. Bacon, chopped & fried crisp
1 green bell pepper, chopped
1 clove chopped garlic
1 (15 ounce) can canned pinto beans, drained
1 (16 ounce) can diced tomatoes with green chilies
1/2 teaspoon dried oregano
salt to taste
1/2 teaspoon pepper
In a saucepan, bring chicken stock to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
In a large skillet over low heat, cook bacon till crisp. Stir in onion, green pepper and garlic; saute until tender. Pour in beans and tomatoes with juice. Season with oregano, salt and pepper. Simmer uncovered for 20 minutes. Serve over rice or add to rice. NOM!!

Seems like there's a bean theme goin on tonight. I won't continue with it though cuz I'm not much of a bean fan. But here it is....almost 7pm and I'm wondering....what am I going to cook for dinner? I asked Dennis if he wanted to go out. He shook his head no . I might just make myself a pb&j on toast and call it a night LOL _________________ Danielle

PattiT, are lima beans the same thing as horse beans?
Tango, yummiiiiiiii. I got to try that one. Thanks for sharing the recipe
Danielle, I didn't make anything with beans. Made a quick spaghetti with bacon, roquefort cheese and basil.
