HUTSPOT #1 - more like mashed potatoes
6 onions
6 carrots
10 potatoes
1/4 to 1/2 cup milk
2 to 3 Tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
Boil onions and carrots until tender. Drain.
In large separate pan, boil potatoes until tender. Drain.
Add carrots and onions to potatoes. Mash completely.
Stir in or mash in: butter, salt, and pepper.
Serve with steak or pork chops. _________________

HUTSPOT #2 - more like stew
2 pounds stew meat
1 pound onions, cut into eighths
2 pounds carrots, cut 1/4-inch
3 pounds potatoes, sliced 1/4-inch
Brown stew meat. Add onions, carrots, and potatoes. Add water that just covers the meat and vegetables.
Cover and cook until meat and vegetables are tender. Lightly mash. _________________

Banana Layer Cake
Cake:
1/2 cup (1 stick) butter, softened
1 cup sugar
2 eggs, slightly beaten
1 teaspoon vanilla
1 cup mashed ripe banana
1 cup buttermilk
2 1/4 cups sifted all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans
Frosting:
1/4 cup (1/2 stick) butter, softened
1 pound powdered sugar
1/2 cup mashed ripe banana
1/2 teaspoon lemon juice
Instructions
Preheat oven to 375F. Grease and flour 2 (9-inch) round cake pans.
To prepare cake, combine butter and sugar in a mixing bowl. Beat with a mixer at medium speed until light and fluffy. Add eggs and vanilla.
Combine banana and buttermilk in a small bowl.
Sift together flour, baking powder, baking soda and salt. Add flour mixture to butter mixture alternately with banana mixture. Stir in nuts. Scrape batter into prepare pans.
Bake 25 to 30 minutes. Cool in pans 10 minutes. Remove from pans and cool completely on wire rack.
To prepare frosting, combine butter with 1 cup powdered sugar; mix well. Combine banana and lemon juice. Add to butter mixture alternately with remaining powdered sugar. Frost top of one cake layer. Place second layer on top and frost sides and top. (If frosting seems too soft, chill for a short time.
Testers’ notes: Increase the frosting by half if you like a thicker coating.
Changes I made were to omit nuts & add cream cheese to the icing!!

Vicki, my recipe is not that different. The first recipe you did is the basic for us too. The stew or rib of beef is done at the side and combined at the table.
And that is simply done by browning the meat on all sides, add water with a tablespoon of vinegar or red wine until the meat is just covered. Add two leaves of laurel, bring to the boil and simmer until the meat is tender. Sometimes the liquid needs thickening a bit for getting a nice gravey. You can either do that by cooking the liquid down or use the beurre manier method. _________________ Fanmajie

Tango - I'll try your Banana Layer Cake when my grandchildren are here.
Fan - I have all the ingredients on hand for Hutspot #1 (downsized for two). I'll also make a tiny beef roast, without the laurel (only ingredient missing).

Hi Girls....This is a recipe I found on Pintrest. Give it a try, it's very good.
*****TWINKIE CAKE*****
INGREDIENTS
1 box of Twinkies
4 lg. bananas, sliced
1 lg. (20 oz.) can crushed Pineapple, drained, but not pressed dry)
1 lg. box Vanilla Inst. pudding, (mix with milk according to directions)
1 (12 oz) Cool whip
Maraschino cherries and pecans for garnishing (opt)
DIRECTIONS:
Remove Twinkies from wrappers. Cut each one in half length wise. Place them in a 9 x 13 pan filling side up. Layer sliced bananas, pineapple, pudding and Cool whip over the Twinkies. Sprinkle with well drained chopped cherries and pecans pieces over the top . Keep in the refrigerator. Serves 2........NOT! Serves about 8 to 10 _________________ Debbie

Hi VICKI, Yea, I WAS going to make it with the kids, but they don't make it over but once a week and my Bananas were getting ripe, so I made it alone, they helped eat it though. HUGS! _________________ Debbie
