So many food items are changing to late summer and early autumn. I can't wait to start experimenting on the stove and in the oven!

I haven't made this tasty recipe for a long time, so I forgot the optional toasted pecans. Hits the spot either way!!

DUTCH APPLE CAKE by dutchmom4

2 cups flour
1 to 2 teaspoons cinnamon, not strong/super flavored **
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans, toasted (optional)*
1 cup butter, melted and cooled
2 cups sugar
2 eggs
1 teaspoon vanilla
4 cups apples, peeled and cubed/diced

Preheat oven to 350 degrees. Grease and flour 11 by 7-inch rectangle pan or 9-inch square pan. (Note: I sometimes use sugar instead of flour to dust the pan.)

Stir together: flour, cinnamon, baking soda, salt, and pecans.

Mix melted butter and sugar. Add eggs and vanilla. Slowly add dry ingredients. Stir in apples.

Bake at 350 degrees for 55 to 65 minutes.


* This is another recipe I use almonds, hazelnuts, pecans, walnuts, etc... as I have on hand.

** I added 2 teaspoons of cinnamon.

Spicy Chicken Fingers
from Southern Living 1991 Annual

2 pounds boned & skinned chicken breasts, cut into strips
3/4 cup milk
2/3 cup masa harina or cornmeal
3 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons dried parsley flakes
1 teaspoon dried whole oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 to 1/2 teaspoon red pepper
3/4 cup all-purpose flour
1/2 teaspoon black pepper
Creamy Green Salsa

Combine chicken and milk; set aside. Combine masa harina (or cornmeal) and next 7 ingredients. Combine flour and black pepper in a separate bowl. To coat chicken, dip milk-soaked pieces first in flour, back in milk, and then in masa marina mixture. Place on wax paper; freeze at least 4 hours. Place frozen chicken fingers on a lightly greased baking sheet; bake at 400ยบ for 30 minutes or until crisp. Serve chicken fingers with Creamy Green Salsa.

Creamy Green Salsa

1/2 cup sour cream
1/3 cup mayo or salad dressing
1/3 to 1/2 cup commercial green salsa
1 tablespoon lemon juice
1/8 teaspoon chili powder

Combine all ingredients, chill.


This was really good, at least, what I could taste of it. Jim said it was spicy, which is what I wanted with the congestion I had. Wink Smile Don't skip out on the dip, it really makes the meal.

Ann, your recipe does look delicious. I usually don't have much salsa on hand, though. Must remember to pick it up. Smile
