Ok, my project is complete. I decided to try a Natur Bakers Blend recipe. I figured theirs turned out so why wouldn't mine. So I made the Dark Devils Food Ganache Cupcakes.
The batter mixed up really nice.
Ready to go in the oven.
After baking.
With the Ganache, I added Heath Bits to some.
The only thing Craig & I both noticed was the cake seems to be crumbly, not dry like I overbaked just crumbly. They seem to taste good with no after taste. I can honestly say I wouldn't have known it was a sugar substitute. I've got some more cupcake tasters that haven't reported yet so I'll give you their feedback when I receive it.
Yeahhhhh...successful project!!

Apple Nut Muffins
INGREDIENTS:
2 cuups flour
3/4 cup sugar *** OR 3/4 cup Naturs Bakers Blend
1 cup brown sugar,divided
1 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
2/3 cup butter, melted
2 eggs, beaten
1 cup buttermilk
1 cup chopped Granny Smith Apple
1/2 cup chopped pecans ***
! tsp. cinnamon
1/4 tsp. nutmeg
DIRECTIONS
Combine flour, sugar, OR Naturs Bakers Blend, 1/2 cup brown sugar, baking powder, baking soda, and salt. In a small bowl combine melted butter, eggs, and buttermilk. Stir liquids into dry ingredients just until well combined. Fold in apples. Spoon into muffins papers OR a 13 x 9 inch pan. Combine remaining 1/2 cup brown sugar, pecans***, cinnamon and nutmeg. Sprinkle over top of Muffins or Cake. Refrigerate covered, several hours or overnight. bake in preheated 350* for 20 to25 mins for Muffins and 35 to 40 mins for cake. May wish to dizzle with a glaze.
NOTE*** I did not use the pecans in this recipe fpr the Naturs Bakers Blend, because some of my Family is allergic to nuts.
NOTE: You can bake this without letting it set in the fridge and the topping will just stay on the top of the Muffins/ Cake. If you do let it set, the topping sinks into the Muffins/Cake forming swirls when it bakes. Very delish!

Hi Babette and Fellow Foodies.....
Well I FINALLY have my Naturs Bakers Blend Recipe done!!!!! Sorry to have been the last one Babette! Here's a recipe for the Apple Muffins I made, the picture, and the review of what my Family and I thought of the product. Naturs Bakers Blend was a bit hard to work with, It would not lend itself to sifting so I could get a good measurment , thank goodness I only needed a 1/2 a cup. Also my recipe called for 1 cup of brown sugar, so I and my Family never tasted the "OFF TASTE" that most were discribing and maybe that's why; plus the sweetness of the apples. I still have some left and and some day soon, might venture in another test, but I really do not find myself going out and buying it.
