OK, I'll be the first to start a thread. I'm pretty addicted to cupcakes as you can see by the cupcake in our logo. But more importantly I would like to connect with other folks that have a similar passion for these little guys. So if you want to talk about cupcakes or share cupcake recipes, post away!

They are awesome.. super moist, very chocolaty and I have never head anyone else who made them say they weren't delicious. What are your favorite cupcake recipes?

what a great idea babs!

i love cupcakes too, in fact its the logo that drew me to this site!

my fave have to be vanilla sponge with a flavour frosting, i like lemon frosting the best!

i havent really explored cupcakes enough, im always looking for a new or exciting cupcake recipie to try!

in fact i have apple sauce and walnuts in my cupboard, i wonder if they'll make nice cupcakes???

Nelly... welcome! Smile Glad to see a familiar face. I bet Garrett can tell you what to make with both ingredients.

I am more a traditional.. flavored cake with a simple frosting - buttercream or cream cheese. I think it's pretty funny that I never think of cupcakes as having the flavor in the frosting.. I'm going to have to try that. Smile The chocolate ones above have a ganache center, but the centers keep the cake moist as they melt in the middle... they are sooo good. In fact, they are better the next day after they've been in the fridge for a night -

I can't wait until this rewrite is over so I can get back in the kitchen... I need to feel normal again... hear that kitchenaid start up. Which by the way is white.. 4.5 qt. I really wish I would have gotten a color and would have been more daring. I'm such a wimp when it comes to decorating and color combos.. hahahh

oooo im so jelous! im desperate for a kitchen aid! i whisked my egg whites for meringue today by hand!!!! it took 20 mins! my arm is sore!

i may have to try those cupcakes, although im normally not a fan of chocolate cakes.

if you need any help with the re-write or anything, (editing english recipies etc....) im not working right now so im free to help out!!

Oh yay, cupcakes, how exciting!
I made these cupcakes not too long ago and I sent them to work with my husband Beau, for him and the guys he works with to enjoy during a coffee break. I packaged the cakes and the frosting separately so that he would have less trouble getting them there. I told him to tell the guys to put the frosting on themselves. I always just called these Elvis cupcakes, because of the banana and peanut butter in them, but the guys b/c of having to do their own frosting, they have since named them "Go Fudge Yourself Cupcakes". So for right now these are my absolute favorites! It's really great cupcake, a combination of banana, toffee, peanut butter and chocolate. I mean, honestly, how could all that not be good!

Recipe for the:
GO FUDGE YOURSELF CUPCAKES

For the Cupcakes :
1 1/2 cup plain flour
3/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup melted butter
1 1/2 cup mashed banana
2 large eggs
1/2 tsp vanilla extract
1/4 cup whole milk

For the Toffee:
1 can of condensed milk

For the Peanut Butter-Fudge Frosting
3 cups confectioners' sugar
3/4 cup baking cocoa
1/8 teaspoon salt
6 Tablespoons of milk
2 teaspoons vanilla extract
1/3 cup of butter or margarine, softened
2 Tablespoons of peanut butter

For Cupcakes : Preheat oven to 375. Line your cupcake pan with liners.
Sift the flour, sugar, baking powder, baking soda and salt into a bowl.
Mix together eggs, vanilla, melted butter and milk and pour this into dry ingredients.
Mashed the bananas and add them to the mixture. Spoon the batter into cupcake liners.
Bake for 25 mins or until that toothpick comes out clean, let them cool completely.

For Toffee :There are many different methods for making the dulce de leche, from placing unopened tins of condensed milk in pots and cover the tins with water, and boiling for 3-4 hours. This scares the heck out of me. As scattered brained as I am, I'm sure I'd forget about them until there was a loud explosion, sending caramel dripping from my ceiling. Another paint job, no, not for me, thanks. There is also the method of putting the milk in a double boiler, and watching it as it SLOWLY turns to toffee, way to intense and too much stiring for my taste. You can also do them in a pressure cooker, which I must admit is also a bit intimidating to me. The absolute best, though not the quickest way is to do what I do. I cook off 4 cans at a time, as they stay just fine in the cans until needed. I place the cans in my crock pot, fill the pot with water, really drown those cans, cover the pot, set it on high and leave it for about 5-6 hours. Shut off the crock pot after the time has passed and let cans cool , remove from the water, and your done making the toffee. Not a fast method, but not life threating either.

For Frosting: Combine sugar, cocoa, and salt in a bowl. Add milk and vanilla.
Blend until smooth. Add butter and then peanut butter. Mix well until spreading consistency is reached

To Assemble Cupcakes :Cut the tops off the cupcakes and scoop out some of the cake. Refill the space with the toffee. Even off the tops and replace them on the cupcakes.
Ice cupcakes with the peanut-butter fudge frosting, hiding any imperfections you may have made while filling.

I do love cupcakes, BUT making them gets me into trouble as I eat too many. I have yet to try your recipe, Babs, but I plan to soon. This is a great idea talking about your favorite foods. I bet there will be many new tried and true recipes offered here...and Carol, yours make me want to bake right now...so much for weight management. LOL!

Nelly, I just got my Kitchenaid a few years ago...in the meantime, the electric hand mixer made by Kitchenaid is a nice alternative to hand mixing.
