I had moved 1150 miles aways from home to SD and couldn't go "home" for a "dinner by mom" anymore... I read the 1975 version of the Joy of Cooking (Chistmas present from parents) from cover to cover.... Something clicked... and IT WAS ON!!!
Many failures and much "learning on the fly" later and with alot of help from Alton Brown. Here I am.... and I love the research part of it... Books, Internet, TV... Figuring out the difference between Caramelization and a Maillard reaction just fascinates me.... food chemistry and how our bodies use what they ingest is absolutely the most amazing thing in the universe to me ...
I can't get enough ... And yet... food itself is SUCH an art form at the same time... It's the best of both worlds.... or as my favorite saying goes ...
Culinary art is both the Scientific Creativity and Creative Science. _________________ ~ Shane
