Have any of you made scallops wrapped in bacon? Do you think they can be put together, baked for a little while and then frozen on a cookie sheet? Later I would finish baking them right before I was ready to serve them. _________________ Karen

Seafood and par-cooking don't really go hand in hand very well. I wouldn't suggest doing this. Scallops can turn rubbery if they're overcooked by a second, and I think that the whole hot-cold-hot thing you'd have going on here would just make that problem even worse. Also, if you're not using fresh scallops, then they've already been frozen once before. Thawing them and then proceeding with the cook-freeze-cook process... that's going to turn them into pencil erasers. I don't think that there's a huge risk of bacteria getting in there, though again... not sure I'd risk it.
But if you're looking to do something ahead of time, you can most definitely assemble these in the morning and keep them in the fridge on a sheet pan wrapped in plastic until later in the day. _________________ http://www.bakespace.com/members/profile/demartino/4548/ |

Thanks, for the feedback............a little late as my reception was on the 1st. I did pre-cook the scallops and bacon, froze them, and they were re-heated on a cookie sheet to crisp them up. They were a huge success and the first to be eaten. I would never have had the time in the morning to assemble and cook them.......there were way too many. Next time, when I have less than 500 people coming, I will make them the day of....everyone seems to love them. Of course anything with bacon, can't be bad. _________________ Karen
