Salsafied Chicken and Rice (Allrecipes.com)
Ingredients:
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves - cubed
1 (14.5 ounce) can chicken broth
1 (8 ounce) jar salsa
2 cups instant rice
8 ounces shredded Cheddar cheese
Directions:
1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook and stir chicken in hot oil until cooked through and juices run clear, 5 to 7 minutes. Add the broth and salsa and bring to a boil; turn off the heat and stir in the instant rice. Sprinkle Cheddar cheese over the mixture. Cover the skillet and let sit until the rice is tender, about 5 minutes.
Found this on Allrecipes.com. It is so good, so easy and so simple. Had enough to take to work, I ate plus two other girls! They even said how good it was.

No salsa on hand at the moment. Can't wait to give this recipe a try. Thanks, Ann!

Hi Ann Marie and Vicki,
If you folks need to cook for a crowd, like 65 or more people just let me know, because we have made adjustments to several recipes to feed 65 people.

Hi Pat,
No travel plans for us in the near future. I still want to visit our friends who live in Hawaii, but the screening at airports are getting too much for us, especially Kathie, because she cann't stand too long after she had back surgery. Hopefully they will ease up a bit on the screening so that we can travel once again with ease. Of course within the contental USA we can travel by train which is very enjoyable.
For the moment we are busy with baking and cooking. In fact for the November men's breakfast at our church on November 03 I'm going to invite all the officers of the American Legion Post I belong to (Woodland Hills Post 826), since Veterans Day is only a week after the men's breakfast. Remember that on Veterans Day lot of restaurants offer free meals to Active Military and Veterans.
