I made Fan's delicious spaghetti recipe last night. My husband enjoyed it as much as I did. This recipe will be remade. Thank you, Fan! Smile


Spaghetti tartlets from the oven with chunky tomato sauce. Serves 4.

For the tartlets
100 grams cooked spaghetti
5 eggs
200 ml milk
50 grams of sun dried tomatoes, finely chopped
25 grams of grated Parmesan cheese, Pecorino or Manchego


Use a muffin tin [for 12 muffins] and muffin tin paper liners or use tin foil cups.
Fill the cups with a bit of the spaghetti and sprinkle the chopped tomatoes over the spaghetti.
Beat the eggs with the milk and season with salt and pepper, pour the mixture over de spaghetti and top with the grated cheese.
Bake the tartlets in the oven at 200C for 25 minutes.

For the sauce
500 grams of tomatoes, diced or a can of 400 grams tomatoes in cubes
2 tablespoons of olive oil
1 tablespoon of balsamic vinegar
grated zest of a lemon

Heat the oil in a saucepan and fry the tomatoes for a minute, then add the balsamic vinegar and the lemon zest and bring to the boil. Put the heat low and have it simmer very softly away for about 20 minutes.

Serve the sauce at the side of the tartlets.

FLAT BREAD PIZZA for TWO
(no tomato sauce) by dutchmom4

2 slices thin flat bread *
olive oil
1 small unpeeled zucchini, thinly sliced (I used a peeler)
4 cooked breakfast sausage links, thinly sliced or chopped
1 roasted red bell pepper, chopped (you can buy or prepare your own)
4 ounces fresh mozzarella cheese, thinly sliced

- Preheat the oven to 350 degrees. Bake the two flat bread slices 3-4 minutes.
- Brush with olive oil. Layer zucchini the across the whole bottom of each slice. Top with sausage, bell pepper, and mozzarella cheese on each slice.
- Bake 5 to 8 minutes.
- Take out and enjoy!

* Spicy Italian and wheat flat bread tried. Tortillas would be a nice substitute.

Slow-Cooker Easy Italian Sausage Vegetable Soup

1/2 lb. bulk Italian pork sausage
1 cup sliced fresh carrots
1 large baking potato, peeled, cut into 1/2-inch cubes
1 garlic clove, minced
2 (14-oz.) cans beef broth
1 (15-oz.) can garbanzo beans or Chick Peas, drained
1 (14.5-oz.) can pasta-style chunky tomatoes, undrained
1 1/2 cups water
1/2 teaspoon dried Italian seasoning
1 bay leaf
1 cup julienne-cut (2x1/8x1/8-inch) zucchini
1/4 cup grated fresh Parmesan cheese, if desired

Cook sausage in large skillet until no longer pink, stirring frequently. Drain. In 3 1/2 or 4-quart slow cooker, combine cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.
Cover; cook on Low setting for 7 to 9 hours.
About 30 minutes before serving, remove and discard bay leaf from soup. Gently stir in zucchini. Cover; cook an additional 30 minutes or until zucchini is tender.
To serve, ladle soup into individual bowls. Sprinkle with cheese.

We had this soup for dinner last night (Shane's) and we didn't care for it. It was edible but we both decided that it would not be made again. Oh well, the only way to know was to make it.
