Can't wait to see your baking and cooking recipes? Do you change your menu to more spring/summer recipes? So far, we haven't... maybe when we hit the upper 70's and 80's.

Vicki - I'd like to know WHEN we will be hitting the 70º mark!! Smile

This is really easy and it's tasty too. Made enough that Jim & can both take some to work.

Layered Beef & Potato Casserole

1 lb lean ground beef
2 cups frozen mixed vegetables
1 jar (12 oz.) beef gravy
1 bag (28 oz.) frozen potatoes O'Brien with peppers and onions, thawed
2 cups shredded swiss cheese (I used shredded cheddar cheese)
Paprika, if desired

Heat oven to 350º. Spray 12x8 inch (2 quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in mixed vegetables and gravy. Cook 3 to 4
minutes or until vegetables are thawed and mixture is hot.

IN baking dish, layer 3 cups of the potatoes and 1 cup of the cheese. Spoon beef mixture over cheese. Top with remaining potatoes. Cover with foil.

Bake 55 to 60 minutes or until bubbly. Remove foil. Sprinkle with remaining 1 cup cheese. Bake uncovered about 5 minutes longer or until cheese is melted. Sprinkle with paprika before serving.

Roadhouse Potatoes

1 32-oz bag Southern Style Hash browns (the little square chunks)
1/4 cup Butter, melted
1/2 tsp Salt
1/4 tsp Pepper
1/4 cup Onion, chopped fine
1 can Cream of Chicken Soup
1/2 pint Sour Cream
1 small Cheez Whiz
1/2 cup crushed Corn Flakes
1/4 cup Butter, melted
Directions:
Combine first 8 ingredients and place in a large, greased casserole.
Combine Corn Flakes with the melted butter and sprinkle on top.
Bake at 350 for 45 minutes.
Note: Depending on the casserole dish that I use, (round or square), sometimes I double the amount of Corn Flakes & Butter that I use in order to cover completely
