I'm just now reading this thread for the 1st time. What a wonderful idea, I'm definitely going to try roasting some and throwing them in the freezer. Sounds delicious.

It is a GREAT idea! I did it last saturday with a bunch of tomatoes that were still fine but i knew would start overipening in a day or two and since we had friends come over that brought more tomatoes out of their garden, i had to act fast. I probably overdid it a bit. In addition to drizzling with oil(I used basil infused avocado oil) and salt, i also sprinkled with oregano, fresh cracked pepper, garlic and onion powder. You should have smelled the house! It was like a gourmet meal was in the oven.
The only problem i had was that i let them sit out in the kitchen for a spell, to cool. Then i was going to peel them and freeze them. Between me, and the people we had over, more than half of them were just picked up and eaten! They were really tasty. The other half is safely in the freezer to be used in my next sauce, whenever that may be. _________________

Wow, reading this thread really makes me long for summer! I just thought I'd share what our family does. When I was a little girl growing up in Brooklyn my grandmother (we called her Nanny and I'll probably be talking a lot about her so thought I'd let you know!) kept a beautiful but simple garden in our yard. I couldn't wait to help her plant and get the soil ready. Every day I'd come home from school and ask Nanny if it was time yet...I was so excited! Anyway, she grew tomatoes, lettuce, string beans, cucumbers, eggplant and zucchini. We had two fig trees, grape vines and a raspberry bush (i think it's a bush, right?). Nanny made her own grape jelly and she canned tomatoes every year so she'd have fresh sauce throughout the winter. Nanny passed away a little over a year ago at 98 years old. The traditions ended when she got too old to do it and caught on to the convenience of canned tomatoes. The past few years me and my cousin's wife decided to pick up the tradition. We bought an electric machine that seperates the skins from the pulp. Last summer we bought organic tomatoes and they came out incredible. We got some family members to help a bit but no one really cares as much as we do about it so it's mostly on us. I'm so excited that we decided to do this, it's well worth the hard work. I wish I knew how to post a picture here because I would love to share some of them with you!!! _________________ MICHELE
