I just found this thread and thought I'd offer my 2-cents worth, since dandelion greens are my favorite food, and I've been picking/cooking/eating them since childhood.
If you purchased the greens, I'm assuming they are cultivated rather than wild, since the wild ones are an early-spring plant. The cultivated ones are more bitter, and I personally much prefer wild. It's true that the smaller and younger, the less bitter they are. If you find any blossoms at all, just forget it; they'll be very bitter. I like them best the way my Mom does it: Triple-washed in cold water, then placed in a covered pot with a small piece of salt pork that's boiled about 1/2 hour first. The salt pork will provide all the seasoning necessary. Cook the greens till tender to your liking. I eat them with butter, pepper, and if they're a little on the bitter side, I sprinkle with vinegar. The next day, heap leftovers on bread with mayonnaise and enjoy a real treat!

I only ever ate it as a salad. Usually with hot bacon dressing.

I decided to save you time and post the recipes here.

Dandelion Greens with Sausage

1 gal. dandelion
1 lb. smoked sausage
3 small potatoes, cut and diced
2 Tbsp. rice
4 Tbsp. vinegar
1 to 1 1/2 qt. water
1 tsp. salt

Wash and cut 1 gallon dandelion greens.
Place in bottom of medium size pot.
Put 1 pound of sausage, cut in pieces, in pot.
Put more dandelion greens on top of sausage. Cut and diced potatoes and put on top of greens.
Sprinkle 2 tablespoons of rice over potatoes. Boil all 40 minutes and add 4 tablespoons of vinegar before serving.
If needed may added more water if it starts to boil dry.


SMOTHERED DANDELION GREENS
(Cicoria Affogata)

2 lbs. fresh dandelion greens
3 tablespoon olive oil
1 clove garlic, chopped
Salt & Pepper
optional: Red pepper flakes while saute`ing garlic

Discard wilted dandelion leaves.
Wash greens several times in cold water and cut off roots (if they are there)
Saute` garlic in hot oil for 1 minutes.
Add washed greens and seasonings.
Cover pan tightly and cook slowly 10 to 12 minutes until tender.
If greens become too dry, add 2 tablespoon water.
Stir occasionally.
Serve hot as vegetable.
