anyone know a good way to cook dandelion greens? I've ordered them before at a restaurant and they were surprisingly mild, but when I sauteed some tonight they were bitter, even after adding some white vinegar and honey. anyone have any suggestions? I am thinking maybe boiling them for a solid 30+ mins might help soften them a little more....wondering if it will help with the bitterness... even chard has been fine sauteed...thoughts appreciated....

Dandelion greens are used in anything from a salad to a soup.
Some recipes call fore braising with bacon or sausage.
There are a bunch of salad recipes which my indicate that if you get young small leaves then they may not be as bitter.

I make a dandeline salad in spring, but the key word here is "spring" - - before the greens get too bitter. I was taught that once they start to form a bud the greens became too bitter to enjoy. Don't know if that's true, but it's the only time of the year we make that salad and the greens are never bitter.  |

Bubbamom is right. The spring is the time for Dandellion greens. There going to be bitter now unless you cook them to death.

You can boil them for about a minute then pour the water that you get out or save it to drink later for the nutrients, by poring out this water you are pouring out the bitterness. That's the way my grandmother used to do it. I hope this helps. _________________ kcqueenm |
