ddpie, I didn't want to rudely hijack Eric's rice thread with my fajita recipe (sorry Eric) so decided to open a new one here. Hope you don't mind.

Ok, I'm sold, now ya gotta give up that fajita recipe (pretty please)! we do fajitas a LOT in my house! (as well as quesadillas on the grill in summer) |
Here you go! It is my favorite fajita recipe.
Marinated Grilled Beef Fajitas
1 cup beer
6 tablespoons lime juice
1 tablespoon ground cumin
1 tablespoon chili powder
2 tablespoons chopped fresh cilantro
1 lb flank steaks
2 teaspoons vegetable oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
8 flour tortillas
salsa
sour cream
guacamole
1. Combine beer, lime juice, cumin, chili powder, and cilantro.
2. Add steak to the marinade, turning to coat.
3. Cover and chill for at least 1 hour.
4. Heat oil in a medium skillet.
5. Add bell peppers and onion.
6. Cook, stirring occasionally until tender.
7. Preheat grill.
8. Remove steak from marinade and grill until med-rare to medium.
9. Let rest for 5 to 10 minutes.
10. Cut steak into thin strips across the grain.
11. Serve with tortillas, onions and peppers, salsa, sour cream and guacamole.
Sometimes I like to grill the the peppers and onions in a grill wok as well. Adding freshly roasted green chilis gives them an interesting kick when I can get them at the farmer's market.
Please let me know what you think. |

Hahahaha, you moved it just as I was posting my reply, lol.
You might want to post in bakespace recipes too, I'm sure everyone will love it. Also, that way, you can just post the link in a thread if the subject comes back up later!
Oh, and BTW, Eric and I (inadvertently) hijack posts all the time, we understand sometimes that happens when you get all caught up in the coversation

Karen, Like DD said, don't even give a thought about higacking my threads. DD and i do it all the time. Once i realize it, i should really try to steer it back. it's not intentional at all and sorry for anyone i've done it to. so, again......don't worry about doing it to me at all! glad to have you aboard because i absolutely LOVE fajitas and this looks like a great recipe!! _________________
