| Yum, that sounds really good. We have a "grill tray" that we always use for onions, peppers, chilis and such, they're just so much better doing them outside. This recipe is close to what I have (the spices) but I hadn't put beer in it before, my hubby will love this. Thanks Karen! |

Verdant Rice
1/4 C diced onion
3 cloves mashed garlic
1 T butter
1 large bay leaf
white pepper to taste
1 can chicken broth
1/2 can rice
1/4 C frozen peas
15 basil leaves - minced
5-6 rosemary leaves - minced - (substitute with what is flavoring meat)
1/3 C chopped parsley
Saute onion and garlic in butter. Add bay leaf and pepper - stir.
Add rice, broth and peas - bring to a boil, reduce to simmer and cover -
simmer till rice is tender, 15-20 minutes. Taste and adjust seasoning.
Fluff with a fork and add the greens - mix well. |

Well gang...Eric's thinking...
I guess that means he will taste it all in his mind, get tired from the exertion and buy potato salad at the grocery....

Tell ya what Pat - seeing as there are major accidents on all my routes home (3, 17, tpke), i just may be getting pizza, period since i probably won't be home til 8pm! _________________
