It's an old family tradition - I like to give pizzelles out around Christmas time. Pizzelles are essentially Italian waffles, but they're extremely thin and crisp. Again, traditionally, we flavor them with anise extract and some whole anise seeds. After making them, you've got to let them sit for a few days for the flavor to develop (a few days minimum - two weeks would be better). They require a special waffle iron to make. Growing up, you could only find them in hard-core Italian districts of the city, but now they're fairly wide spread.
In years past, I'd go nuts making all different kinds of cookies to give out. I finally realized that the only thing people really want are the pizzelles. Everyone's making cookies around Christmas; what they appreciate getting is the one cookie that they can't make on their own. |

Not sure I have a favorite Holiday cookie. I make one that for years my daughter called 'Grandpa" cookies, cause they were my father's favorite. Many call it the Mexican wedding cookie or the pecan sandie cookie. My father passed away 13 years ago and we will always call this cookie the Grandpa cookie, and I only make them for Christmas.
Pizzelles are another cookie I only make at Christmas. Isn't it crazy these two cookies are easy to make but I only make them once a year.
Guess that's what makes them extra special. |

I make a soft chocolate cookie and add a sweet cream cheese filling. It's been a favorite and everyone loves them.
