Does anyone know how to make coconut moist again once it's started to dry out? Idea

I am not sure... but the first thing that comes to mind is the way to make brown sugar soft again... Place the coconut in a sealable container and add a couple of apple slices.. Leave at room temperature overnight.

Just wondering, why would you want to make it moist again? What is the purpose of it?
You can take the dried coconut and pour hot water over it and after a while drained it and you have a thin coconut milk which you can use as the sauce for Gado Gado.
here is the simplified recipe that I submitted:

Selamat makan! In Indonesia gado means vegetable. Gado gado is vegetables.

This is the Americanized version of this national dish, Gado Gado. A great way to get your family to eat more veggies.

Gather an assortment of veggies both raw or lightly cooked, and place in a salad bowl. Your selection might include spinach leaves, cucumbers, shredded lettuce, green beans, carrots, boiled potatoes, bean sprouts, hard boiled eggs, fried tofu etc.

To make the sauce: Sauté 1 cup of chopped onion and 6 cloves of minced garlic in 3 T. of oil. Stir in 1 cup of boiling water, 2 cups of crunchy peanut butter, 2 T. of honey, 1 t. of Tabasco, 1 T. of lemon juice, 1 T. of fresh ginger. Cook sauce over medium heat until hot and peanut butter is melted. Gradually stir in 3 cups of milk. Serve the sauce over the veggies. Shrimp chips are the classic accompaniment

Rabbiteer is it freshly grated coconut or pre-packaged? Pre-packaged unsweetened coconut is normally dry and will last for years when stored in the freezer. If it is freshly grated coconut and doesn't look and smell normal than throw it out.
