Hey there,
Suddenly today, I decided that I should try and make Roasted Salsa for the first time. Now that I have everything gather the nervousness has set in. Sort of odd considering I can salsa all the time.
First question is would you go all out and do it on the grill or would you slow roast them on a low temp in the oven?
Second, do you prefer whole veggies or do you slice them in half and add the EVO and Course Salt with herbs?
How good is this canned? Anything else would be most appreciated.

I would definitely roast them on the grill... then you get the fire roasted flavor. =) _________________ ~Marguerite

Oooooh, I agree w/ Spryte. Although I've only either blanched them or roasted them for salsa...the grill would give it an awesome flavor!
I would slice your veggies in half, they'll get more flavor that way and also roast faster.
Are you using a water bath method or pressure canner? If you use the water bath method, the thing you have to be careful of is the acid/veggie/tomato ratio. Here's an example of a basic salsa recipe, read the "important" notation at the end.

Hey there,
Thanks mucho mega bunches ladies. I ended up slow roasting the veggies on the grill!!!! Major good advice & ended up with six pints of what I would consider some very good roasted salsa : )

Well honest I would share "But", this batch is going into the "Get Good Grades in College" box, from what I have been told my Daughter is Starving.
